Fillet Knives

Used almost exclusively for the preparation of fish, fillet knives vary greatly in terms of flexibility and width. When deciding what filet knife to purchase one ought to consider the tasks for which the knife will be used. Greater flexibility is advantageous for use on soft boned species like salmon and can be quite helpful when making center line cuts through flat fish like halibut. Stiffer filet knives are better suited for use on large salt water fish with tougher bones. Ultimately it is a matter of preference and we often find that you will be best served by selecting the degree of stiffness to which you have become accustomed.
