Suncraft Knives
Suncraft Senzo: Made in Seki Since 1948
Suncraft has manufactured kitchen knives in Seki City, Japan, since 1948. Widely respected in Japan and less familiar in the United States, the company produces knives in a broad range of steels, blade shapes and handle designs. The Knife Merchant imports Suncraft knives directly. Master Sharpener Charlie Robertson, Chef Pietro Leemann, founder of Joia in Milan, and our own staff all recommend them.
Suncraft reserves the Senzo name for knives made entirely by its own artisans. Many lines from Suncraft and other Japanese makers are produced by consortiums of separate workshops; the Senzo lines are not, and they represent the highest quality Suncraft offers. The name honors Senzo, a Suncraft family ancestor respected in Seki for his charitable contributions.
Senzo Black Damascus
A cobalt VG10 core hardened to 61 HRC, clad in 32 layers of black Damascus stainless steel. The symmetrical 50/50 bevel and tapered pakkawood wa handle suit right- and left-handed cooks equally.
Senzo Twisted Octagon
A modern interpretation of the traditional Japanese wa handle. A gently twisted octagonal handle of white pakkawood is paired with a VG-10 core clad in 32 layers of Damascus steel.
Senzo Professional
A plain, utilitarian design built around SG2 powdered stainless steel, which holds a fine edge without being brittle. The handles are shaped for cooks accustomed to European-style knives.
Senzo Clad
San mai construction: an AUS10 core tempered to 60 HRC between single layers of softer steel, hand sharpened on a water wheel. A well-balanced, practical line that can be maintained with a honing steel.
Kawashima Elegancia
Designed by Suncraft President Shoichi Kawashima and distributed in the United States by Messermeister. Wide, Western-style bunka blades of SG2 powdered stainless steel combine long edge retention with toughness.
