F. Dick Superior 9 in. Carving Knife is the perfect length for carving Game Hens, Chicken and Turkey. It has a pretty fair amount of flex, similar to that of a sole knife. As such, this knife works very well as a salmon slicer and for filleting fish. The Superior series was designed for professional as well as domestic use.
