The longer of Matfer Bourgeat’s two Exoglass Rigid Whisks is built for large batches of thick food: a full pot of mashed potatoes, a big bowl of choux paste or a batch of heavy cake batter. Its stiff stainless steel wires push through dense mixtures without flexing out of shape.
At this length, the whisk reaches the bottom of a deep pot while your hand stays above the rim. Each wire is welded to a steel core and molded into the Exoglass handle for a secure anchor under heavy load, and the handle’s rounded end stops it from slipping into the pot. It carries NSF certification and Matfer Bourgeat USA’s limited lifetime warranty.
Choosing Between the Rigid Whisks
For smaller batches and standard mixing bowls, the 15.75-inch rigid whisk is easier to control. If the mixture is light enough to whip, use a piano or balloon whisk.
| Whisk | Lengths we carry | Best for |
|---|
| Piano | 10, 12, 13.75, 15.75 and 17.75 inches | Everyday whisking of cream, eggs, dressings and sauces |
| Rigid | 15.75 and 17.75 inches | Dense mixtures such as mashed potatoes and choux paste |
| Balloon | 17.75 inches | Beating air into eggs and egg whites |
