The 13.75-inch Matfer Bourgeat Exoglass Piano Whisk is sized for medium and large mixing bowls, where most whipping and emulsifying happens. Its extra length over the 12-inch keeps your hand above the rim of a deeper bowl while you whip cream or build a hollandaise.

Fine stainless steel wires aerate cream and egg whites quickly and blend thin sauces smoothly. Stiff doughs and heavy batters call for a sturdier tool, and Matfer’s 15.75-inch Exoglass Rigid Whisk is built for them. Like every Matfer piano whisk, this one has shape-memory wires and a heat-insulating Exoglass handle.

Choosing a Length

For small bowls and saucepans, the 12-inch is easier to control. For large batches and deep pots, step up to the 15.75-inch.
