Chef Feedback
“The handle geometry is a standout.”
Before First Use
Rinse the pan with warm water, dry it completely, then warm it over low heat for a few minutes with a thin film of high smoke-point oil such as grapeseed. For the first several cooks, choose fattier foods such as bacon, steak, or skin-on chicken; the rendered fat bonds to the factory seasoning and builds the patina faster. Hold off on eggs and delicate fish until the surface has darkened and become slick.
Tips for Best Results
- Preheat over medium-low heat for 2 to 3 minutes, add oil or butter and let it heat for 1 to 2 minutes, then add food. Medium-low heat is enough for a full sear in carbon steel.
- On a standard home burner, allow a little extra preheating time so the outer edge of the 12-inch floor comes up to temperature.
- Limit long-simmered acidic ingredients such as tomatoes, wine, citrus, and vinegar, which can strip the seasoning.
- Hand wash only. Wipe the pan clean, or scrub with coarse salt and a little oil for stuck-on food. Avoid dish soap, soaking, and the dishwasher.
- Dry the pan over low heat after every wash and apply a thin coat of oil or Made In Carbon Steel Seasoning Wax before storing. The Made In Carbon Steel Cleaning Set (3-Piece) handles everyday cleanup.
- If stacking, place a Made In Silicone Pan Protector 12 inch or a towel inside the pan to protect the seasoning.
- Uneven color and spotting are a normal stage of seasoning and even out with use. Surface rust is not permanent; scrub it away and reseason.
- The handle stays cool on the stovetop but becomes hot in the oven, on the grill, and over open flame. Use a towel or mitt.
