Paring Knives
Smooth or serrated, by definition a paring knife is used in hand and up off of the cutting board. Paring knives come in three basic shapes, although the names of these shapes may vary by distributer. Ranging from 3 to 4.5 inches in length, spear point parers can be identified by the shape of their blade the spine and tip of which meet in the immediate center of the knife. Spear points are the most common style of paring knife manufactured. The second style is known as a sheepsfoot parer although this shape is sometime referred to as kudamono. The straight edged spine of a sheepsfoot parer is distinct in that it rounds down to meet the dead flat edge of the knife. The last shape of paring knife available is known as a birds beak peeler or parer. This hook shaped blade is ideal for specialized tasks like fluting mushroom caps and is the perfect tool for executing the French seven sided cut known as tourné.

Mercer White 3" Paring Knife
In a professional production environment, a paring knife is an extension of the hand, not just a tool. The Mercer White 3-inch Paring Knife (M18170) is engineered specifically for the physical demands of high-volume prep stations. Unlike consumer-grade knives that prioritize aesthetics, this series focuses on tactile safety and fatigue reduction. During hands-on testing in high-moisture environments—peeling citrus, segmenting shallots, and trimming proteins—the dual-material handle provides a consistent mechanical lock. The combination of Santoprene for comfort and polypropylene for structural integrity ensures the knife remains secure even when hands are coated in fats or acids. The blade is forged from high-carbon, stain-resistant Japanese steel. This specific alloy was selected for its serviceability; it maintains a functional edge through crates of produce while remaining responsive to a ceramic rod for mid-service realignment. This is not a hollow-ground blade; instead, it features a clean, flat-tapered profile that provides predictable resistance and superior control for delicate off-board tasks. The seamless transition from the bolster to the blade eliminates food traps, making it a favorite for health-department-compliant kitchens. At 3 inches (76mm), the blade length is optimized for leverage and precision, reducing the wrist torque typically associated with longer, poorly balanced utility knives. Learn More -
Kyocera Innovation 3" Paring Knife - White Blade (TK-075 WH-BK)
A compact ceramic paring knife designed for precision work, peeling, and controlled in-hand cutting. The Kyocera Innovation White 3" Paring Knife is built for detail-oriented tasks where control matters. The short blade allows for precise handling, making it well suited for peeling, trimming, and shaping ingredients directly in hand. The blade is made from zirconia ceramic. It holds its edge significantly longer than steel and maintains that performance through extended use. Because it is non-reactive, it will not affect flavor or cause browning when working with ingredients like citrus, apples, or herbs. This knife cuts cleanly with minimal resistance. It allows for controlled, accurate cuts, which is especially useful when working with small produce or delicate ingredients. The 3" length provides maximum control for intricate work. It is designed for off-the-board tasks where a larger knife would feel cumbersome. Ceramic behaves differently than steel. It holds its edge well but does not flex. Avoid hard materials such as bones or frozen foods, and do not twist the blade during use. This knife is best suited for fruits, vegetables, and small trimming tasks. It is not intended for heavy-duty cutting. The lightweight construction reduces fatigue during repetitive work. The handle provides a secure grip for precise control. The blade will not rust or corrode. When sharpening is required, it should be done with a diamond system or professional service. Learn More$40.00 -

Kyocera Innovation Black 3" Ceramic Paring Knife (ZK-075 BK)
The Ultimate Tool for High-Precision Culinary Detail In the world of high-volume prep and intricate garnishing, steel isn't always the superior choice. The Kyocera Innovation Black 3" Paring Knife (ZK-075 BK) represents a paradigm shift in ceramic cutlery. Utilizing Kyocera’s proprietary Z212 zirconia ceramic, this blade is engineered to maintain its razor-sharp factory edge significantly longer than traditional steel and even standard ceramic lines. This isn't just a knife; it is a specialized instrument designed for tasks where control and material purity are paramount. Why Z212 Ceramic Matters Traditional steel knives can transfer a metallic taste to delicate foods and accelerate the browning (oxidation) of fruits like apples, avocados, and pears. The Innovation Black series is completely non-reactive. This ensures that your ingredients look fresher for longer and retain their natural, untainted flavor profile. The Z212 material is exceptionally hard—measuring 8.2 on the Mohs scale—allowing it to glide through soft-skinned produce with virtually zero resistance. Ergonomics Built for the Professional Hand The ZK-075 BK is remarkably lightweight, specifically balanced to reduce hand fatigue during repetitive in-hand tasks like peeling, coring, and decorative carving. The ergonomic 'Soft Grip' handle provides a tactile, secure connection, ensuring safety even when working with wet ingredients. Whether you are a professional chef executing complex garnishes or a home enthusiast demanding the cleanest possible cuts for healthy meal prep, this knife delivers a level of precision that steel simply cannot replicate. F. Dick 1905 Series 3" Bird's Beak Peeler
Master Intricate Garnishing with the F. Dick 1905 Bird's Beak Peeler When executing a classic Tourné cut or peeling a delicate stone fruit, the physical feedback from the knife determines the outcome. The F. Dick 1905 Series 3" Bird's Beak Peeler provides a tactile weight that feels substantial in the hand, unlike stamped alternatives. The curved blade is specifically engineered to maintain constant contact with rounded produce, reducing wrist fatigue during high-volume prep. Forged from X50CrMoV15 high-carbon stainless steel, this blade is tempered to 56 HRC. This hardness offers a strategic balance: it holds a razor-sharp 50/50 bevel edge through crates of root vegetables while remaining easy to hone with a standard ceramic rod. The handle is the standout feature of the 1905 series; instead of traditional rivets, solid steel rings are fused to the POM (Polyoxymethylene) handle. This creates a completely gap-free, hygienic seal that prevents organic matter from compromising the tool—a critical requirement for health safety compliance in commercial kitchens. Handling this knife, you immediately notice the forward balance point. This allows the blade to 'fall' into the cut, requiring less downward pressure from the thumb. Whether you are removing blemishes from potatoes or carving intricate radish roses, the tip stays exactly where you place it without flex. It is a specialized tool for those who prioritize technical accuracy in their knife work. Learn More$48.75 -
F. Dick Superior 3 in. Sheeps Foot Parer
F. Dick Superior 3 in. (70mm) Sheeps Foot Parer is a useful tool for working with fruits and vegetables. The flat profile of the blade is great for peeling and cutting small thin strips for garnishing. The Superior series was designed for professional as well as domestic use. A classic design with handle rivets and the lightweight design produce a knife that is safe to use. With the Superior knife series, Friedr. Dick has succeeded in perfectly combining a modern knife in shape and functionality with a traditional handle design with three rivets. The result is a perfectly shaped classic of exceptional quality. The continuous steel from blade to handle ensures a high degree of stability. The steel consists of a X50CrMoV15 high-quality alloy. These components ensure lasting edge retention and a long life time with the appropriate toughness and high corrosion resistance. Polish honing of the knife edges with a smooth cutting edge makes them even sharper, even faster, even better. The food to be cut is cut through exactly and not “sawed” or even squashed; this means that valuable flavours remain in the cut food. Learn More$13.35 -
