Everything a working kitchen needs, from the first knife to the stone that keeps it sharp.

Choose a knife by blade shape

The shape of a blade determines the work it does best. Start with the cut you make most often, then compare steel, weight, and handle within that shape.

Chef’s knife

Also called gyuto
Miyabi Black 8-inch chef's knife

The all-purpose blade. A curved edge rocks through herbs and onions; the length handles larger produce and proteins.

Mixers and food processors for serious baking and prep

Two stand mixers built around a motor in the base, for large batches of bread dough, and a food processor that chops, slices, kneads, and whips from a single motor.

Prep tools that make fine knives work better

A board that protects the edge, a mandoline for uniform slices, and a grater for finishing work: the tools that sit beside the knife on a prep station.

Teak’s natural oil and silica content resists moisture, and its medium hardness is gentle on knife edges. On end-grain boards, the edge slides between the wood fibers rather than across them.

Keep every edge sharp

A sharp knife is safer and more precise than a dull one. Three habits keep a knife in working condition.

Shop Idahone sharpeners
  1. Hone regularly

A fine ceramic rod realigns and lightly refines the edge between sharpenings. Idahone’s fine rods rate approximately 1200 ANSI, or 3500 JIS. Shown: Idahone 12-inch Fine Ceramic Rod

Idahone 12-inch fine ceramic sharpening rod
  2. Sharpen when honing stops working

A guided V-type sharpener holds coarse and fine ceramic rods at 15 degrees per side for Japanese knives or 22 for Western knives. Shown: Idahone CS-24 V-Type Sharpener. Prefer stones? Shop waterstones

  3. Store the blade safely

Questions

Should I choose a Japanese or German kitchen knife?

German knives are generally heavier, with tougher steel that tolerates hard use and little maintenance. Japanese knives are generally lighter and thinner, with harder steel that holds a finer edge but needs more careful handling. Choose German for durability and an all-purpose feel; choose Japanese for precision and a lighter knife.

Should I buy an Ankarsrum or a Bosch stand mixer?

Both place the motor in the base and leave the top of the bowl open for adding ingredients while mixing. The Ankarsrum Assistent Original rotates a 7-liter stainless steel bowl and kneads up to 5 kg (11 lb) of dough. The Bosch Universal Plus drives a central dough hook and dual whips in a 6.5-quart bowl and accepts optional attachments such as a blender and meat grinder.

Why choose a teak cutting board?

Teak’s natural oil and silica content resists moisture and warping, and its medium hardness is gentle on knife edges. End-grain boards such as the TeakHaus 311 let the edge slide between the wood fibers, which helps hard Japanese blades stay sharp.

How do I keep a kitchen knife sharp?

Hone regularly with a ceramic rod. When honing no longer restores the edge, sharpen it on a guided sharpener such as the Idahone CS-24 or on a waterstone. Use a wood cutting board, and avoid glass, stone, and the dishwasher.
