Most stand mixers drive a heavy head from above, and the motor's weight and heat become the limiting factor once the dough gets dense. The Assistent Original works differently: a 600-watt motor sits in the base and turns the bowl itself against a stationary dough roller and scraper, so the torque goes straight into the dough instead of through a gear head. That bottom-drive layout is why it holds up under dense rye and high-hydration sourdough without straining or walking across the counter.

The bowl stays open through the whole mix, so you can check hydration, take a dough's temperature, or fold in seeds and dried fruit without stopping the machine. It handles up to 11 pounds (5 kg) of dough in the 7-liter stainless bowl, and switches to a 3.5-liter Tritan bowl with dual balloon whisks for whipping and aeration.
