How the Assistent Original Works

• Turning Bowl, Stationary Tools: The bowl rotates while the dough tools stay in position. This arrangement mimics the motion of hand kneading, which produces superior gluten development and keeps heavy loads from taxing the motor.


• Whole-Grain and High-Hydration Doughs: The hand-kneading motion also handles dense whole-grain doughs and wet, high-hydration doughs, and Ankarsrum publishes guides for working with both.


• Ingredients on the Fly: With the offset arm, the bowl is completely open, so ingredients can be added mid-mix, with no pause in the mixing and no heavy head to lift out of the way.


• Automatic Power Matching: A variable speed sensor lets the high-torque motor match its power to the load automatically, and the 12-minute timer built into the base keeps kneading times repeatable.


• Capacity for Big Bakes: Few residential mixers are larger. It takes a single egg white at one end and 5 kilograms (11 pounds) of dough at the other, which suits high-volume holiday baking. Whipping the egg white calls for the optional Premium Beater Set, because the Essential Package contains no whisks.


• Swedish Construction: Assembled by hand in Ankarsrum, Sweden, since 1940, the mixer has a body of die-cast aluminum and dials of chrome-plated zinc, both made to last.

If You Plan to Whip or Cream

Whisking falls outside the Essential Package.
