Wüsthof’s 17-slot acacia block stores a full set of kitchen knives in light, warm acacia with a visible grain. It shares its layout with Wüsthof’s walnut and black 17-slot blocks, so the choice between them is purely about which wood suits your kitchen.

Block fit is the question customers bring us, and this block answers it generously. Its long slots take blades up to about 11 inches, which covers a 10-inch chef’s knife and a 9-inch bread knife, and a full set of steak knives fits in the rows below. Start with a set such as the Classic 6-piece starter block set and grow into the empty slots, or use it for a collection from several brands. Larger collections need the 35-slot acacia block, and a 6-slot steak knife block can sit beside this one if your steak knives need a home of their own.

Checking Fit

Measure the width of your widest blade at the heel and compare it with the slot widths above.
Insert knives with the edge facing up where the slot allows, so the edge does not drag on the wood.
The 2.25-inch slot has ample room for a santoku or nakiri.
The shear slot also holds a carving fork or a similarly sized tool.
The honing steel slot holds a 10-inch round or oval steel; set an oval steel into the slot on a bias.

Care

Wipe the block with a damp, lint-free cloth. Make sure knives are completely dry before you put them away, and turn the block over now and then to shake out crumbs.
