Victorinox 10-inch Combination Cut Honing Steel

The Victorinox 10-inch combination steel has two sides grooved as a fine cut and two smooth sides for use as a polishing rod. Polishing rods are used by butchers who want to keep a razor edge.

We recommend a couple of strokes on the fine side, top and bottom of the blade, then rotating the steel 90 degrees and finishing on the polishing side for a smooth, mirror-finish edge.

It is made in Sheffield, England, with a plastic handle and a ring for hanging, and the 10-inch steel fits nicely into a standard knife block. It suits knives up to 8 inches, such as the Fibrox Pro 8-inch Butcher and Fishing Knife.

Wipe the rod clean after use. The polishing faces stay smooth only if they are kept free of grit, so store the steel where it will not knock against other tools.

    How to Hone

    Hold the steel upright with the tip on a towel or board. Set the heel of the knife against the top of the rod at roughly 15 to 25 degrees and draw the blade down and toward you so the whole edge passes along the rod. Alternate sides for a few light strokes each; pressure does not help.


    Care

    • Wipe the rod clean after use and dry it before storing.
    • Hang it by its ring or store it in a block slot so the surface does not knock against other tools.
