R Murphy 2.5 in. Olympia Oyster Shucker

The R. Murphy Olympia Oyster Shucker was designed in collaboration with Marco Pinchot of Taylor Shellfish Farms specifically for opening Kumamoto and Shigoku oysters. The blade has a short four sided eased edge grind that runs an inch from the tip and then gently tapers to a flat unground blade body. This design is superior to other shuckers for opening these challenging small "pearls" oysters. Although this shucker is designed for use on oyster species with delicate, misshapen shells that make it difficult to locate the hinge, the Olympia can certainly handle larger East and West Cost varieties as well.
