Specialized Maintenance & Care
- Carbon Reactivity: This blade is NOT stainless. It will rust if left wet. It must be wiped dry immediately after every use, especially when cutting acidic foods like citrus or onions.
- Patina Development: Expect the blade to change color from bright silver to a dull grey or blue. This is normal and desired for carbon steel enthusiasts.
- Sharpening Protocol: Because of the 80/20 asymmetrical grind, sharpen the right side (the side facing out when held) at a shallow angle and the left side (facing the body) more vertically to maintain the factory geometry.
- Storage: Apply a thin layer of food-grade mineral oil or Tsubaki oil if the knife will be stored for more than 48 hours without use.
