Santoku Knives

Translated to mean “three virtues”, Santoku knives are effective all-purpose tools that vary in shape from the western chef knife but serve the same purpose in terms of their utilitarian functionality. The “three virtues” to which the word Santoku refers align with the three tasks of slicing, dicing, and mincing. Their shape is unique to other knives in that Santokus resemble truncated chef knives with altered tips and minimal camber. Unlike the blades of German knives that sweep upwards to meet the tip, the spines of Santokus are rounded downwards to meet the knife edge. Please note that the lack of camber interferes with a traditional rocking motion so Santokus are more often use in a chopping manner.

  • Kikuichi Nickel Damascus 7 in. Santoku

The Artful Workhorse: The Kikuichi 45-Layer Damascus Santoku For the discerning cook who believes beauty and function should be inseparable, this Santoku is an heirloom in the making. The blade immediately commands attention—a stunning, 45-layer Damascus steel that flows and shimmers with a unique, organic pattern. This is not just a knife; it is a piece of functional art, where the story of its forging is written on the steel itself. This visual masterpiece is created using the traditional Warikomi method, where the intricate Damascus layers are hammer-forged around a powerhouse core of high-carbon AUS-10 steel. This core is the secret to the knife's incredible performance. It represents the pinnacle of "workhorse" steels—delivering an aggressively sharp edge that is easy to maintain, while offering the exceptional toughness and stain resistance required for daily, demanding use. It is sharpness that is not precious; it is meant to be used with confidence, day in and day out. As a Santoku, its "three virtues"—slicing, dicing, and mincing—are executed with a satisfying authority and rhythm. The 7.1-inch blade is perfectly balanced, making the swift, precise work of meal preparation feel less like a chore and more like a creative act. The blade’s soul is anchored by a robust, full-tang handle of rich, deeply-grained Rosewood, offering a seamless and comfortable transition from steel to hand. The hand-engraved Kikuichi chrysanthemum on the blade is the final, quiet signature—a mark of a 750-year-old legacy and a commitment to perfection that you can feel with every single slice. This is an experience, an invitation to transform the daily act of cooking into a moment of genuine pleasure and pride. Learn More
  • Mac Superior 4.1 in. (105mm) Santoku

Surgical Precision Meets Santoku Utility The Mac Superior SK-40 is not merely a small knife; it is a specialized architectural solution for the 'middle-ground' tasks that frustrate chefs using standard parers. While most 4-inch knives force your knuckles to collide with the cutting board, the SK-40 features a distinctive tall blade profile and an up-swept handle. In hand, this geometry provides a physical 'lift' that allows for rapid-fire mincing of garlic, shallots, and ginger without compromising finger safety. Forged from a high-carbon AUS-8 mono-steel and hardened to 60 on the Rockwell scale, the edge geometry is a symmetrical 50/50 bevel. During testing, the SK-40 displayed exceptional lateral stability—a rarity for a blade only 2.0mm thick at the spine. The roll-forged construction produces a dense grain structure that holds a 'toothy' bite, allowing it to glide through slippery scallion skins and tomato membranes where softer European knives typically skid. This is a tactile instrument. The 2.3-ounce weight makes it feel virtually weightless, functioning as an extension of the index finger for peeling pears or trimming silver skin from tenderloins. The black Pakkawood handle is resin-impregnated, providing a non-porous, high-friction grip that remains secure even when wet with vegetable juices. Whether used as a sheep's foot parer or a miniature chef's knife, the SK-40 eliminates the need for constant tool-swapping during intensive prep sessions. Learn More

  • Masahiro Virgin Carbon 6.9 inch (175mm) Santoku

Legendary Sharpness for the Dedicated Chef The Masahiro Virgin Carbon Santoku (175mm) is widely regarded as one of the best-kept secrets in the professional culinary world. While many modern knives prioritize being "maintenance-free," this blade prioritizes one thing above all else: pure cutting performance. Forged from Masahiro’s premium Virgin Carbon Steel, this knife takes an edge that is significantly sharper and thinner than standard stainless steel, allowing it to glide through onions, peppers, and proteins with zero resistance. The Masahiro Difference: The 80/20 Edge
What makes this knife feel different in your hand is its unique asymmetrical edge geometry. Unlike standard Western knives that are ground evenly on both sides (50/50), Masahiro craftsmen sharpen this blade to an 80/20 ratio. This subtle yet powerful design creates a steeper, sharper angle on the right side, pushing food away from the blade for cleaner slices and superior release. It transforms a standard prep knife into a precision instrument. Built to Work
Designed for the rigors of a professional kitchen, the handle is crafted from antibacterial reinforced wood. It offers the warm, classic look of Rosewood but is impregnated with resin to prevent shrinking, cracking, or water damage. Note: This is a true high-carbon steel knife. It is not stainless. It will develop a unique gray patina over time—a badge of honor for the chef—and must be washed and dried immediately after use to prevent rust. Learn More
