Slicing Knives

As their name suggests slicing knives are designed to be used when slicing meat. These long, thin blades typically range from 8 to 14 inches in length and are very similar to carving knives with exception to their rounded tips. The tip of a slicing knife has been rounded for the protection of anyone on the other side of a carving station who may be overly eager to reach in for an extra helping of roast beef

  • I.O.Shen MSH Ryoba Carver 8.25-inch

A Michelin-Standard Hybrid That Redefines Precision Slicing When two-Michelin-star chef Daniel Clifford designed the I.O.Shen MSH Ryoba, he wasn't looking for another standard carver. He needed a tool that could handle the intricate work of a 12-hour service—slicing delicate proteins while possessing the structural integrity to clear small bones and cartilage without damaging the primary edge. The result is the MG4200, an 8.25-inch masterpiece that bridges the gap between Japanese surgical sharpness and Western heavy-duty utility. At the heart of this blade is I.O.Shen's signature Triplex Steel Technology. Unlike cheaper stamped blades or even traditional single-alloy forged knives, Triplex features a high-carbon Erdon 6000 core (Rockwell 62) sandwiched between two layers of softer stainless steel. This construction creates a 'self-honing' effect as the outer layers wear, while the core maintains a razor-sharp 15-degree edge through hundreds of cuts. Whether you are portioning 40 lbs of brisket or filleting a delicate sea bass, the edge remains consistent. What truly distinguishes the Ryoba is its 'toothed' heel. Inspired by the Japanese Ryoba saw, this serrated section allows you to initiate cuts through tough skin or small bones that would normally dull a standard carving edge. It gives you the confidence to use the front 80% of the blade for flawless, clean-slice presentation, while relying on the heel for the heavy lifting. The medium-sized handle and balanced weight distribution make it a favorite for chefs who find traditional carvers too cumbersome for fast-paced line work. Learn More
  • Messermeister Blacksmith 8.5 in Bread Knife

Master Every Crust: The Art of Precision Slicing with the Blacksmith Series In a world of mass-produced cutlery, the Messermeister Blacksmith 8.5-Inch Scalloped Slicing/Bread Knife stands as a testament to the enduring power of forged excellence. This is not merely a bread knife; it is a specialized precision instrument designed for the culinarian who demands both aesthetic soul and mechanical perfection. Crafted in the historic forge-works of Germany, the Blacksmith series celebrates the raw, unrefined beauty of traditional knife-making while utilizing high-performance X50 German stainless steel. The blade undergoes a rigorous heat-treatment process to achieve a Rockwell Hardness of 56-58, ensuring a razor-sharp edge that retains its bite through thousands of loaves without becoming brittle. What sets this knife apart is the gentle camber of the scalloped edge. Unlike straight-edge serrated knives that require high pressure to 'saw' through crust, the curved profile of the Blacksmith allows for a natural rocking motion. This architectural advantage ensures that whether you are tackling a rock-hard sourdough boule or a delicate, ripe summer tomato, the knife glides through the skin with zero compression and minimal crumb loss. The 2.8mm spine thickness provides the lateral stability required for perfectly uniform slices, preventing the 'wandering' often experienced with thinner, stamped blades. The handle is an exercise in ergonomic luxury. Constructed from Ebony Pakkawood, it offers the heat and moisture resistance of a composite with the organic warmth and unique grain pattern of natural hardwood. The balance point is meticulously set at the bolster, providing a weight-forward feel that lets the gravity of the 8.5-inch blade do the work for you. For the professional chef or the dedicated home baker, the Messermeister Blacksmith isn't just a purchase—it's an heirloom-quality upgrade to your daily craft. Learn More
  • Messermeister Blacksmith 9 in. HE Slicer

Master the Art of the Perfect Slice When it comes to the final presentation of a prime rib, a smoked brisket, or a delicate poultry breast, the tool you choose determines the quality of the meal. The Messermeister Blacksmith 9-inch HE Slicer is not just a knife; it is a specialized instrument designed for the discerning chef who demands both aesthetic soul and technical perfection. Part of the acclaimed Blacksmith series, this knife features a rustic, dark-forged finish that pays homage to centuries of bladesmithing tradition while housing a core of modern, high-carbon German steel. Narrative Performance: Precision Without Friction The hallmark of this slicer is its Kullens (hollow-ground divots) positioned along the blade. These aren't just for show—they create air pockets between the steel and the meat. This drastically reduces drag and suction, allowing the blade to fall through heavy proteins with minimal effort. Whether you are performing 'one-stroke' slices of a tenderloin or navigating the bone structure of a holiday ham, the 9-inch length provides the ideal leverage for medium-to-large carving tasks. The Blacksmith Aesthetic Meets Modern Ergonomics Unlike mass-produced stamped cutlery, the Blacksmith series offers a unique visual profile. The blade's finish is balanced by a premium Ebony Pakkawood handle. This material offers the natural beauty of wood with the durability and moisture resistance of a composite. The result is a handle that feels warm in the hand, providing a secure, non-slip grip even during long carving sessions. This is where the heritage of German forging meets the demands of a high-volume kitchen. Learn More

  • Dexter Sani Safe 18 inch Pizza Knife

Professional Single-Stroke Portioning for High-Volume Pizzerias Handling a high-volume pizza station requires a tool that manages the physical resistance of dense dough and heavy toppings without dragging or tearing. The Dexter Sani-Safe 18" Pizza Knife (SKU 18073) is engineered to solve the 'drift' associated with standard wheel cutters. By utilizing a continuous 18-inch rocking motion, this blade makes full-diameter contact, ensuring every slice is a clean, vertical separation even through heavy Chicago-style deep dish crusts. The tactile experience of this knife is defined by its 1lb 2oz weight, which provides enough gravity-assisted momentum to reduce shoulder fatigue during 8-hour shifts. The 2.3mm spine remains rigid under downward pressure, preventing the lateral flex that causes uneven portioning. In the hand, the Sani-Safe polypropylene handle offers a coarse, slip-resistant texture that remains secure even when hands are damp or covered in flour. This is a purpose-built tool for professional environments where speed and sanitation are non-negotiable. The blade's 3-inch height provides significant knuckle clearance, protecting the operator from contact with hot cheese or steam while maintaining a low-profile rocking angle that minimizes wrist strain. • Dexter Sani Safe Hollow Edge Narrow Slicer

Engineered for the Line: Professional Slicing Precision Without Blade Drag When you are working a high-volume buffet line or prepping large-scale protein service, the resistance of the blade against the meat is your primary enemy. The Dexter Sani-Safe 10" Narrow Slicer (S140-N10GE) is specifically engineered to solve this through its 0.75-inch narrow profile and precision-ground Granton edge. Each hollowed groove creates a pocket of air and fat during the stroke, preventing the vacuum seal that typically causes thin slices of roast beef, ham, or turkey to tear or stick to the metal. Handling this knife reveals its professional pedigree. The 10-inch (250mm) blade provides the necessary length for long, single-stroke draws, which is essential for maintaining the structural integrity of the protein. The balance point sits just forward of the bolster, allowing the weight of the high-carbon DEXSTEEL to assist in the downward cut, reducing wrist fatigue during extended shifts. The handle—the iconic Sani-Safe white polypropylene—is textured with a tactile grit that remains secure even when working with fatty meats or in humid kitchen environments. It is physically bonded to the tang, creating an impervious seal that prevents cross-contamination, a critical factor for NSF compliance. This isn't just a knife; it's a specialized tool for chefs who require consistent, appetizing results under pressure. The 56-58 HRC hardness ensures the edge remains sharp through hundreds of slices, yet it responds immediately to a ceramic honing rod when a quick touch-up is needed mid-service. Learn More
  • Dexter Sani-Safe 10 in. Scalloped Slicing Knife

Zero-Drag Precision: The Industrial Standard for High-Volume Slicing When you pull the Dexter Sani-Safe 10" Narrow Scalloped Slicing Knife through a warm prime rib or a delicate turkey breast, the first thing you notice is the lack of resistance. Unlike standard slicers, this S140-N10SC model features a narrow blade geometry that drastically reduces surface area contact. In a fast-paced commercial environment, this means less drag, fewer 'stuck' cuts, and significantly reduced hand fatigue over an eight-hour shift. The 1.5mm thin spine allows for surgical precision, while the 10-inch length provides the necessary reach for single-stroke slicing, ensuring the protein fibers are sliced cleanly rather than shredded. The scalloped edge is the functional heart of this tool. Each individually ground scallop creates a point of entry that breaks through tough crusts or poultry skin without requiring downward pressure. Once the cut is initiated, the rounded scallops glide through the muscle tissue, maintaining the integrity of the meat's moisture and presentation. This isn't just a bread knife; it is a specialized carving instrument designed for chefs who need to maintain uniform slice thickness across hundreds of portions. The tactile experience is defined by the signature white Sani-Safe handle. The polypropylene is textured to provide a mechanical lock with your palm, even when covered in fats or moisture. You feel a secure, rigid connection to the DexSteel blade, which is hardened to a Rockwell rating of 56-58. This hardness ensures the scalloped points remain sharp through thousands of cycles, while the high-alloy composition prevents the staining and pitting common in high-acid environments like prep stations handling citrus or tomatoes. This is an American-made workhorse that prioritizes safety, sanitation, and physical efficiency above all else. Learn More
