Wusthof Classic Ikon Knives

Wusthof Classic Ikon knives have some very distinct and highly regarded design innovations. First, the bolster on the Cook's Knife has been modified for ease of sharpening. There is a steel end cap (referred to as a second, or double bolster) that assists in balance and aesthetics. The POM handle has a unique humpback design that snugs nicely into the palm creating a very firm and comfortable grip. Perfect distal tapering and laser guided sharpening techniques are a result of precise German engineering and robot-assisted construction. The steel is tempered to a Rockwell hardness of 58 that is easily maintained with use of a fine-cut honing rod. Wusthof remains a family owned and operated company after 200 years. Manufactured in Solingen, German, these knives come with a full lifetime warranty.

Wüsthof Classic Ikon 7-Inch Flexible Fillet Knife
A flexible fillet knife designed for clean separation, higher yield, and precise control. The Wüsthof Classic Ikon 7-Inch Fillet Knife is built for the delicate work of breaking down fish with accuracy and efficiency. Forged in Solingen, Germany, it features a thin, flexible blade that follows the natural contours of the fish—allowing you to separate fillets cleanly from bone with minimal waste. Unlike a stiffer boning knife, this blade is engineered to flex as you cut. That flexibility allows the edge to glide closely along the spine and ribcage, improving yield while reducing resistance through delicate proteins. The narrow profile further minimizes drag, helping the knife move smoothly through skin and flesh without tearing. The blade is precision-forged from a single piece of X50CrMoV15 high-carbon stainless steel and hardened to 58 HRC for durability and edge stability. Wüsthof’s PEtec process ensures a consistently sharp edge that performs reliably through detailed work. What sets the Classic Ikon series apart is its comfort-focused design. The contoured handle and rear bolster shift the balance into the hand, providing a more controlled, stable feel—especially important during repetitive or precision cuts. The half-bolster design allows for full-length sharpening, ensuring the knife performs consistently from heel to tip over time. Best For

The handle design is made of a highly durable synthetic material known as Polyoxymethylene (POM), which features a tighter molecular structure to resist fading and discoloration.
