Wusthof Classic Ikon Knives

Wusthof Classic Ikon Knives

Wusthof Classic Ikon knives have some very distinct and highly regarded design innovations. First, the bolster on the Cook's Knife has been modified for ease of sharpening. There is a steel end cap (referred to as a second, or double bolster) that assists in balance and aesthetics. The POM handle has a unique humpback design that snugs nicely into the palm creating a very firm and comfortable grip. Perfect distal tapering and laser guided sharpening techniques are a result of precise German engineering and robot-assisted construction. The steel is tempered to a Rockwell hardness of 58 that is easily maintained with use of a fine-cut honing rod. Wusthof remains a family owned and operated company after 200 years. Manufactured in Solingen, German, these knives come with a full lifetime warranty.

  • Wusthof Classic Ikon 11-Piece Knife Block Set

The Broadest Classic Ikon Set We Carry The Wüsthof Classic Ikon 11-Piece Set is for cooks who prepare a wide range of dishes and want a dedicated blade for each kind of work, from bread and vegetables to breaking down poultry. It includes eight knives, among them a santoku and a boning knife, along with a honing steel, shears, and a 15-slot block.
Why It Works Chef’s knife and santoku: Two primary prep shapes, so the santoku can take vegetables and the chef’s knife can take proteins, or each cook can use the shape they prefer. Boning knife: A narrow blade for separating meat from bone, trimming silverskin, and breaking down chicken. Bread knife: A long serrated blade for crusted loaves and layer cakes. Four small blades: Two paring knives, a straight utility knife, and a serrated utility knife cover peeling, trimming, and small-format slicing. Half bolster: The bolster stops short of the edge, so the full length of the blade can be sharpened. Rear bolster and contoured handle: A steel end cap balances the blade, and the curved handle accommodates both a handle grip and a pinch grip. PEtec edge: Wüsthof’s laser-guided Precision Edge Technology sets a uniform edge from heel to tip.
In the Kitchen Compared with the Classic Ikon 8-Piece Set, this set adds the santoku, boning knife, and bread knife, which makes it suited to cooks who bake bread, butcher their own poultry, or cook vegetable-heavy meals. It does not include steak knives. Learn More

  • Wusthof Classic Ikon 8-Piece Knife Block Set

Five Prep Knives Built Around Precision Work The Wüsthof Classic Ikon 8-Piece Set is for cooks who do a great deal of fine prep and want more than one small blade on hand. Alongside the chef’s knife, it includes two paring knives, a serrated utility knife, and a straight utility knife, with a honing steel, shears, and a 15-slot block.
Why It Works Two paring profiles: A flat cut paring knife and a standard paring knife let you keep one blade for in-hand peeling and another for detailed work on the board. Two utility knives: The serrated utility knife cuts tomatoes, citrus, and sandwiches cleanly; the straight utility knife portions cheese, trims small cuts, and slices produce too small for the chef’s knife. Half bolster: The bolster stops short of the edge, so the full length of the blade can be sharpened. Rear bolster and contoured handle: A steel end cap balances the blade, and the curved handle settles firmly into the palm. PEtec edge: Wüsthof’s laser-guided Precision Edge Technology sets a uniform edge from heel to tip.
Who It Suits This set favors detailed prep over bread and large-format work. It does not include a bread knife; cooks who slice loaves regularly may prefer the Classic Ikon 6-Piece Starter Set or the Classic Ikon 11-Piece Set, both of which include one. Learn More

  • Wüsthof Classic Ikon 7-Inch Hollow Edge Nakiri

A precision vegetable knife designed for faster prep, cleaner cuts, and all-day comfort. The Wüsthof Classic Ikon 7-Inch Hollow Edge Nakiri is built for cooks who want maximum efficiency when working with vegetables. Forged in Solingen, Germany, it pairs traditional German craftsmanship with a Japanese-inspired blade shape designed specifically for slicing, dicing, and chopping produce. Unlike the rocking motion of a chef’s knife, the Nakiri’s flat edge is optimized for a vertical push-cut technique. This allows the full length of the blade to contact the board, producing clean, uniform cuts with less effort—whether you’re working through dense root vegetables or delicate herbs. The hollow edge (Kullenschliff) features evenly spaced indentations that create small air pockets during the cut. This reduces sticking and helps ingredients release more cleanly from the blade, improving speed and consistency during repetitive prep. The blade is precision-forged from a single piece of X50CrMoV15 high-carbon stainless steel and hardened to 58 HRC for long-term durability and edge stability. Wüsthof’s PEtec process ensures a consistently sharp edge with excellent retention. What sets the Classic Ikon series apart is its comfort-focused design. The contoured handle and rear bolster shift the balance into the hand, creating a more controlled, less fatiguing feel during extended prep. The half-bolster at the blade allows for a natural pinch grip and enables full-length sharpening from tip to heel.   Best For High-volume vegetable prep where speed and consistency matter Cooks who prefer push-cutting over rocking Slicing, dicing, and chopping fruits, herbs, and vegetables Anyone looking for a more comfortable alternative to traditional chef’s knives Learn More
