F. Dick 1905 Series 7 in Carving / Boning Knife
The Friedrich Dick 1905 Boning Knife is an excellent multi-purpose blade that is fully forged, with a reduced bolster for comfort. This knife uses an excellent blend of high carbon steel with a mix of chromium and molybdenum for reduced wear and increased edge retention. I've never seen this shape before in German steel, but it is one of my favorites. Excellent for removing silver skin from tenderloins or veal legs. Great for trimming fat from the backside of ribs. Can be used as any other boning knife, but I also find this shape to be much easier to re-sharpen. Learn More$88.40 -

F. Dick 1905 Series 3" Bird's Beak Peeler
Master Intricate Garnishing with the F. Dick 1905 Bird's Beak Peeler When executing a classic Tourné cut or peeling a delicate stone fruit, the physical feedback from the knife determines the outcome. The F. Dick 1905 Series 3" Bird's Beak Peeler provides a tactile weight that feels substantial in the hand, unlike stamped alternatives. The curved blade is specifically engineered to maintain constant contact with rounded produce, reducing wrist fatigue during high-volume prep. Forged from X50CrMoV15 high-carbon stainless steel, this blade is tempered to 56 HRC. This hardness offers a strategic balance: it holds a razor-sharp 50/50 bevel edge through crates of root vegetables while remaining easy to hone with a standard ceramic rod. The handle is the standout feature of the 1905 series; instead of traditional rivets, solid steel rings are fused to the POM (Polyoxymethylene) handle. This creates a completely gap-free, hygienic seal that prevents organic matter from compromising the tool—a critical requirement for health safety compliance in commercial kitchens. Handling this knife, you immediately notice the forward balance point. This allows the blade to 'fall' into the cut, requiring less downward pressure from the thumb. Whether you are removing blemishes from potatoes or carving intricate radish roses, the tip stays exactly where you place it without flex. It is a specialized tool for those who prioritize technical accuracy in their knife work. Learn More$48.75 -
