It combines the experiences of the past with the knowledge of the present: The year 1778 is the founding year of the Friedr. Dick company in Esslingen. It was in this year that Friedr. Dick realised his vision of a company, resolutely turning a long-cherished dream into reality. Some time later in 1893, Paul Friedr. Dick had the dream of a multi-layer steel that could combine the advantages of carbon steel with the positive properties of stainless steel.  But in the rush of planning for participation in the 1893 World's Fair in Chicago, the preparations for which fully occupied all employees, the idea of three-layer steel temporarily disappeared into a drawer. This ingenious innovation was almost forgotten, but Wilhelm Leuze, great-grandson of the commercial councillor Paul Dick, took up this vision of a chef's knife in the present day and gave life to this product idea.  Made in Germany. • F. Dick Red Spirit AJAX 8-inch Chef's Knife

The Relentless Precision of the F. Dick Red Spirit AJAX When Friedrich Dick first designed the AJAX in the 1930s, the goal was to create a tool that bridged the gap between a cleaver and a chef’s knife. Today, the Red Spirit AJAX has evolved into an essential piece of equipment for BBQ Pitmasters and professional butchers who demand a blade that does the heavy lifting for them. Unlike standard chef knives that struggle with thick connective tissue or heavy crusts on smoked meats, the AJAX utilizes its unique 'belly' curvature and substantial weight to glide through beef briskets and pork shoulders with surgical precision. Crafted in Deizisau, Germany, this knife is part of the celebrated Red Spirit series, known for combining traditional German metallurgy with the sleek, round ergonomics of Japanese handle design. The result is a tool that feels incredibly maneuverable in the hand despite its intimidating profile. Whether you are slicing through the thinnest ribbons of prime rib or portioning dense cuts for a 12-hour shift, the AJAX maintains a relentless edge. This is not just a knife; it is a specialized performance instrument for those who treat meat preparation as a high art. It excels in environments where speed and appearance matter—producing clean, juicy slices that preserve the integrity of the protein. Learn More
