Pride Abrasives 600 Grit Water Stone (slate/blue-grey). Pride stones use a vitrifed bonding process rather than resin. This is particularly helpful on these lower-grit stones where most brands create excessive slurry and break down quickly. Norton 4000/8000 Grit Combination Waterstone
The Norton 4000/8000 Grit Combination Waterstone creates an abrasive slurry during use, for effective sharpening with less pressure than oil stones. The 4000 grit is for maintaining and refining your blade's edge, and the 8000 grit is for polishing. The 4000 grit side requires some soaking and the 8000 can be used as a "splash and go". Minonokuni's 4000 grit waterstone is a traditional Japanese finishing stone, custom specified by Minonokuni's craftsmen for Knife Merchant and tested extensively in regular use here in our own kitchen. This stone gives excellent feedback, develops a slurry easily, and resists dishing, holding its flat surface well over repeated use. It leaves a mirror finish with a level of polish that is noticeably better than other stones of comparable grit. As a traditional waterstone, it should be soaked before use, typically until the bubbles stop rising. The surface should be kept wet throughout sharpening. Masahiro 3000 Grit Waterstone
This 3000-grit traditional waterstone delivers a comparatively high polish for its grit, paired with excellent cutting abrasion. This is an ideal final stone for an all-purpose blade. This 3000 grit also fits naturally into more advanced sharpening progressions: stones in the 2000-4000 grit range sit in the middle of the spectrum, following a coarser 400-1000 grit stone that shapes the edge and removes any chips, then refining that edge past the coarser scratch pattern it leaves behind. In a three- or four-stone progression, this stone serves as that middle stage, preparing the edge for a higher-grit (6000+) stone to follow for a mirror polish. In a simpler two-stone setup, though, it works just as well as the finishing stone itself, producing a keen edge with excellent cutting bite. This 3000 Grit stone has a very smooth texture and is intended for polishing a knife for cutting proteins. This is a waterstone so it will need to soak for a minute or two before use. Made in Japan.
