Glestain K Series 5.5-inch (140mm) Offset Utility Knife

The offset utility knife gives you the control of a short, thin blade with the knuckle clearance of a chef’s knife. Its blade drops below the line of the handle, so your hand stays clear of the cutting board while you dice an onion or slice a pepper.

The edge has a long, even curve, and nearly the whole blade meets the board on each cut, which speeds up board work for a knife this size. It is short enough for precise trimming, and it is a top pick for anyone looking to prepare an entire meal with a blade under 6 inches, a task that would be impossible with most utility knives.

The dimples keep slices from sticking, and the K Series handle, with a bolster and no end cap, keeps the knife light. For cooks who find a chef’s knife too large but want to keep their usual cutting technique, it is a good choice.

Choosing an Offset Utility Knife

For a longer blade, see the K Series 210mm Offset Utility Knife. Left-handed cooks can choose the 140mm Left-Handed Offset Utility Knife. The straight 140mm Utility Knife suits in-hand work. Our guide to kitchen knife shapes explains utility knives.

Sharpening a Glestain Edge

One face of a Glestain blade drops almost straight from the spine, and the other tapers to the edge, so the two sides are sharpened at different angles. Work the primary face (the right side on this knife) at about 16 to 18 degrees until a burr forms along the full edge, then remove the burr from the left side at about 22 degrees with a few light passes. Sharpen on whetstones; a pull-through or electric sharpener grinds both sides alike and alters the geometry. Our article on sharpening Glestain and Masahiro knives explains the method in detail, and our video on sharpening compound bevel knives shows it on the stone.

Care

  • Wash by hand with warm water and mild soap, then dry the knife at once. Do not put it in a dishwasher.
  • Acuto 440 resists stains but is not immune to them; do not leave the blade wet or soaking.
  • Cut on wood or plastic boards, and keep the edge away from frozen food, hard shells and heavy bone.
  • Hone between sharpenings with the Glestain hexagonal ceramic honing rod, and store the knife in a guard, a block or a case.
