Norpro Krona Professional Stainless Steel 8.5-inch Flat Sauce Whisk
The Professional Secret to Flawless Sauces and Precision Deglazing In a high-pressure kitchen, every tool must earn its place in your knife roll. The Norpro Krona 8.5-inch Flat Sauce Whisk is not just another utensil; it is a precision instrument designed specifically for the art of sauce making and deglazing. Unlike traditional balloon whisks that struggle to reach the tight angles of a sauté pan, the flat, low-profile design of the Krona allows you to maintain constant contact with the bottom of the pan. Master the Fond Whether you are preparing a delicate reduction or a hearty gravy, the true flavor lies in the fond—those caramelized drippings at the bottom of the pan. This whisk’s flat wire orientation acts as a precise scraper, ensuring you incorporate every bit of flavor into your liquid without the awkward wrist angles required by round whisks. Built for the Professional Environment Durability is non-negotiable for professional chefs. The Norpro Krona is constructed from professional-grade stainless steel with a solid-filled, waterproof handle. This eliminates the risk of water or bacteria being trapped inside the handle—a common failure point in inferior kitchen tools. With its NSF certification, this whisk meets the highest standards for public health and safety in commercial environments. At 8.5 inches, it is the ideal length for control and fits seamlessly into standard knife rolls, making it the perfect 'go-to' tool for the traveling chef. Learn More$10.50 -

Masahiro MV 150mm Utility Knife
The Masahiro MV 6 in. (150mm) Utility has decent knuckle clearance for a utility knife. Very sharp and edged on one side of the blade (80/20). Very useful for close, precise hand work like shallots, garlic, trimming fat etc.. Some Chefs with smaller hands like to use this as their main knife. Because the blade is narrow and thin, it glides right through food with a minimal amount of drag. If you're a fan of Jacques Pepin (and if not, you should be) you may notice that he uses this knife style for much of his basic slicing and dicing. . The MV line by Masahiro is the model that sets the standard for stainless steel professional knives. The handle is made of laminated reinforced wood with antibacterial agents. The blade is made of high-carbon stainless steel "MBS-26," which is resistant to rust and has excellent sharpness durability. The weight of the knife feels good in your hand, and it is a well-balanced design that does not tire you out even after long hours of work. A single-edged blade is a knife with a back bevel on one side. The main benefit of a single sided blade is the taper of the blade comes to a finer edge; an added benefit of the single-sided blade is the ease of sharpening on stones, the majority of the sharpening process is done just on the face(front) side of the knife only a small amount of sharpening work is needed on the backside of the knife to straighten and align the edge. I.O. Shen 6.7 in (170mm) Boning Knife
This I.O. Shen is longer than most boning knives at 6.7 inches. It can be difficult to find Japanese steel in a Western boning knife shape. The U.S. market tends to use softer steel boning knives requiring regular honing. This is an excellent option for someone who wants better sharpness and edge retention. A unique modified VG10 steel that is tough. I am comfortable recommending this knife for breaking down fish, poultry and meats, removing silver skin, etc. If you are going to be scraping bones for "Frenching" chops and that type of task, go with a softer steel.
