  • Mercer Renaissance 8-inch Chef's Knife

German Forged Performance Without the Premium Brand Markup Professional-grade X50CrMoV15 high-carbon stainless steel meets ergonomic precision for relentless daily prep work. In the high-pressure environment of a professional kitchen, an 8-inch chef’s knife is not just a tool; it is an extension of the cook. The Mercer Renaissance Series (M23510) is engineered to provide the exact metallurgical performance of legacy German brands at a significantly more accessible price point. By sourcing premium X50CrMoV15 German steel and utilizing precision manufacturing in Taiwan, Mercer delivers a forged, full-tang blade that maintains a razor edge through 40 lbs of mirepoix without the premium European labor markup. This knife is designed for the cook who demands weight and balance. The one-piece forged construction ensures a seamless transition from the high-carbon blade to the triple-riveted POM handle. This isn't a lightweight stamped blade; it is a heavy-duty workhorse designed to handle everything from fine mincing of delicate herbs to the heavy dicing of root vegetables. The short bolster exposes the full length of the blade edge, allowing for easier sharpening and full-length cutting, a critical feature for high-volume production. The 56 Rockwell hardness strikes the ideal balance between edge retention and ease of maintenance. While harder steels may chip, the Renaissance series remains resilient, allowing for quick honing on a ceramic steel to return to a factory edge in seconds. This is the definitive choice for culinary students and industry veterans who prioritize utility and durability over brand prestige. Learn More

  • Dexter Traditional 8" Flexible Fillet Knife - Beechwood Handle

This Dexter 8 inch stainless steel fillet knife is very popular for fishermen. It has a good balance between flexibility and strength. Strong enough to gut and cut the fillets without deflection around the bones and flexible enough to make easy work of removing the skin. High carbon dex-steel and a beechwood handle. Made in USA The Gold Standard for Professional Fish Processing For generations, the Dexter-Russell Traditional Series has been the heartbeat of the commercial fishing industry. The Dexter 8" Flexible Fillet Knife (SKU: 10893 / S2333-8PCP) represents the modern evolution of this American heritage. While veteran fishermen may remember the original carbon steel version, this latest iteration utilizes proprietary Dex-Steel™—a high-carbon, high-chromium stainless steel that delivers the legendary ease of sharpening of carbon steel while providing the superior corrosion resistance necessary for harsh saltwater environments. The 8-inch blade is meticulously engineered for the 'Sweet Spot' of fish processing. At a precise 0.5 inches wide with a slim 1.7mm spine, it offers the surgical flexibility needed to glide effortlessly over rib bones and under skin with minimal resistance. Yet, the 55/56 Rockwell hardness ensures the blade retains enough backbone to gut larger species without deflection or 'wandering' in the cut. This delicate balance of strength and suppleness makes it the preferred tool for species ranging from Snapper and Walleye to Striped Bass. The handle is crafted from genuine, sustainably sourced Beechwood, offering a warm, traditional grip that synthetic handles cannot replicate. Over time, the wood develops a unique micro-texture that conforms to the user's grip, providing superior control even when wet. Combined with a precision-ground 50/50 bevel, this knife is more than just a tool; it is an extension of the angler's hand, proudly manufactured in the United States to meet the most demanding standards of culinary and marine performance. Whether you are a professional deckhand processing hundreds of pounds of catch or a weekend enthusiast who values professional-grade equipment, this knife offers the reliability that has made Dexter-Russell a household name in coastal communities for over two centuries. • Glestain 724TK 9.4 in. (240mm) Gyuto

A high-performance Japanese gyuto built for speed, efficiency, and clean food release in demanding environments. The Glestain 724TK 240mm (9.4") Gyuto is built for high-volume prep where speed, consistency, and reduced fatigue matter. This blade combines Glestain’s signature dimpled design with a durable steel that holds an edge well and is easy to maintain. It isn’t brittle and can be quickly brought back with a honing rod. This makes it practical for long prep sessions and daily use. This knife improves the quality and consistency of your cuts. It produces clean, repeatable results with less effort, which becomes clear with regular use. If you are actively developing your technique, it is still important to practice with other knives as well, so you don’t develop bad habits. Glestain uses a patented Kullenschliff (dimpled) pattern. These deep, rectangular scallops create space between the blade and the ingredient. This reduces the suction effect you get with starchy vegetables. Food releases more easily and sticks less to the blade. This means cleaner cuts and a cleaner workspace. Less fatigue. Higher efficiency. The blade is made from sub-zero treated Acuto 440 stainless steel. It is hardened to 58–59 HRC. This gives you a balance of edge retention and toughness without the fragility you see in harder Japanese knives. Most knives are shaped like an isosceles triangle with both sides tapering evenly from the spine to the edge. They are sometimes sharpened with a steeper bevel on one side, but the blade itself remains symmetrical. Glestain knives are different. They are shaped more like a right triangle, commonly described as a 70/30 asymmetrical grind. On a right-handed knife, the left side of the blade drops straight down from the spine, while the right side tapers in at a steeper angle. This geometry lets the blade fall into each cut with very little resistance. Each slice pushes away from the blade naturally, so you can move cleanly into the next cut. This knife is part of the TK series. It has a stainless steel bolster and a full-tang PakkaWood handle. The added weight helps the blade glide through food with little effort. Hand-finished in Niigata, Japan, by Honma Kagaku.

  • Glestain 8.25 in. (210mm) Gyuto

The Glestain 8.25 in. (210mm) Gyuto is the most popular size for home and line cook use. Fast, efficient and resilient, this knife holds up to tough use. Nicely balanced, but if you want to save some money, the same blade is available without the steel butt plate (See Item GLS821TK) Learn More
  • Glestain 8.25 in. (210mm) Gyuto without End Cap

The Glestain 8.25 in. (210mm)Gyuto does not have a steel butt plate as do the other Glestain gyutos. This changes the balance to make it more blade heavy, but also brings the cost down considerably. This knife is exactly the same in all other aspects. I actually prefer a knife to be a bit blade heavy. While many chefs consider the balance of a knife in their hand, I prefer to think of it as how the knife feels when I'm cutting. A slightly blade heavy knife feels perfectly balanced when I start applying pressure to the food being cut. Since I can't juggle, and this isn't a throwing knife, the balance in my hand means very little to me, and I prefer this knife. Learn More
