Wusthof Classic 5 in. Boning Knife

There are two boning knives available in Wusthof Classic. This 5 inch model is stiff, and the 6 inch which is flexible. I find it easier to keep an edge on the stiff boning knives, whereas the flexible knives work better for filleting fish and tasks where a little give in the blade is desirable. In general, these knives are used for de-boning chicken or ham, trimming fat and sinew. The tapered, pointed blade is a necessity for working closely around joints.
