Victorinox Hardwood 6-inch Straight Stiff Extra-Wide Boning Knife

Butchers who learned the trade on Victorinox Rosewood knives will recognize this stiff, extra-wide 6-inch boning knife with a wood handle. Victorinox now calls the line Victorinox Hardwood, and the handle is modified maple stained in the same traditional rosewood color.

The extra-wide blade is the most rigid of the straight boning shapes. It resists twisting under the lateral pressure of heavy fabrication, follows the skeleton of beef, pork and large poultry, and stays true through dense connective tissue and cold fat. The extra height also leaves more steel to resharpen over the life of the knife.

Use the point to open joints, then lean on the wide blade for long, straight strokes along the bone. On a shoulder clod or a pork butt, the width lets it work between muscle groups the way a flank and shoulder knife does.

The same blade with a slip-resistant synthetic handle is the Fibrox Pro 6-inch Straight Stiff Extra-Wide Boning Knife. For a slimmer blade that turns more easily, see the Hardwood 6-inch Straight Stiff Wide Boning Knife. Our Kitchen Knife Shapes guide compares boning shapes.

    Choosing a Victorinox Boning Knife

Narrow blades turn tightly around joints; wide blades add stability and leave more steel for resharpening. Our Kitchen Knife Shapes guide explains each shape, and the full range is in our Victorinox boning knives category.

    Keeping the Edge

Victorinox steel at this hardness takes a fine edge quickly and responds well to honing. A few light strokes on a honing steel during a work session keep the edge aligned; sharpen on a stone or a guided sharpener when honing no longer brings it back. Our Honing Rod Guide compares regular, fine and polishing cuts, and the Victorinox 12-inch fine cut honing steel suits these blades.

    Care

    • Hand wash only. Wash with warm, soapy water and dry at once; do not soak the wood handle or put it in a dishwasher.
    • Cut on wood or soft composite boards rather than glass, stone or ceramic.
    • Store in a block, on a magnetic strip or in a sleeve such as the Victorinox Knife Safe for 4-inch to 6-inch Knives, not loose in a drawer.
