Victorinox (200mm) 8 in. Breaking knife, this butchery tool is commonly used to cut thin long cuts of beef. The unique Granton or Hollow Edge makes for cleaner cuts as the meat will have a harder time clinging to the blade. This tool will help butchers and cooks to preform cutting tasks quicker with better results. This knife uses Victorinox's proprietary steel blend known around the world for its ability to hold and take an edge. This knife is very easy to sharpen and hone, Knife Merchant recommends a fine cut honing rod to be used with this knife. Please wash by hand. Made in Switzerland.
