Messermeister Kawashima 8-inch Chef's Knife

Messermeister calls Kawashima its sharpest collection yet, developed in partnership with a renowned bladesmith in Seki, and the 8-inch chef’s knife is the line’s centerpiece. Its core is SG2 powdered steel, a very hard stainless that takes a keen edge and keeps it through long stretches of prep, so ripe tomatoes and delicate fish are sliced cleanly.

The blade is unusually tall, and Messermeister says the broad profile allows for efficient rocking motions. That height also gives plenty of knuckle clearance and a wide face for scooping chopped vegetables to the pan. The walnut Pakkawood handle and brass bolster give it a warm, finished look on the counter. A hard edge rewards a careful cook, so it suits enthusiasts who sharpen on whetstones and professionals who want a chef’s knife that stays sharp between sessions. Keep it away from bones and frozen food, which can chip a very hard edge.

For vegetables, add the 6.5-inch Nakiri. The 5-Piece Magnet Block Set includes this knife.

    Care

Kawashima knives are not dishwasher safe. Hand wash with warm water and a mild detergent and dry immediately. The thin, hard edge should be kept off bones, frozen food and glass or stone cutting surfaces. Suncraft notes that a brass bolster takes on a patina over time.
