Shun Classic Blonde 7-inch Santoku (DM0702W)

The Shun Classic Blonde 7-inch Santoku is a multipurpose Japanese knife for cooks who want a shorter, easier-to-handle alternative to a chef’s knife. The santoku handles the basic kitchen cutting tasks with ease, and it is especially well suited to the push cut, moving the blade down and forward through the food for clean, even slices. Its shorter length makes it easy to maneuver in a small kitchen or on a compact board, and the slight curve of the belly still allows a rocking cut when you need one. The wide blade carries cut food from board to pan. The light blonde PakkaWood handle brings the performance of the Shun Classic Blonde line to a brighter kitchen.

Features

  • Santoku profile: The flatter edge excels at push cuts, and enough belly remains for rocking.
  • Compact length: The blade is shorter than a standard chef’s knife, so it stays light and quick to maneuver.
  • VG-MAX cutting core: Shun’s proprietary steel is strong, fine-grained, and resistant to wear and corrosion, and it holds a very keen edge.
  • Stainless Damascus cladding: Layered stainless steel supports the core, adds stain resistance, and helps food release from the blade.
  • D-shaped blonde PakkaWood handle: The light-toned handle is comfortable in either hand, durable, and does not harbor bacteria.
  • Full composite tang: The composite construction keeps the knife light and balanced.
  • Handcrafted in Seki City, Japan: Each Shun knife requires at least 100 individual steps to complete in Seki City, one of Japan’s most important blade-making centers since the 13th century.
  • Free lifetime sharpening: Shun offers free lifetime sharpening, so the edge can be professionally restored whenever it needs it.

Tasks It Handles Well

  • Push-cutting cucumbers, carrots, and zucchini
  • Dicing onions and peppers
  • Slicing boneless meat and fish
  • Mincing herbs and garlic
  • Scooping cut food from board to pan

Choosing a Shun Classic Blonde Knife

For a longer blade with more curve for rocking, the Shun Classic Blonde 8-inch Chef’s Knife is the Western-style choice. For a dedicated vegetable knife with a fully flat edge, consider the Shun Classic Blonde 6.5-inch Nakiri. With an ebony handle, the closest equivalent is the Shun Classic 7-inch Hollow Ground Santoku, which adds indentations along the blade for food release.

    Care and Use

    • Hand wash with warm water and mild dish soap immediately after use, then dry completely with a towel. Do not place the knife in a dishwasher, soak it, or leave it to air-dry.
    • Rinse the blade promptly after cutting acidic foods such as citrus, tomatoes, and onions.
    • Cut on a wood surface, ideally hinoki, and avoid glass, marble, granite, and ceramic.
    • Do not cut bone, frozen food, or hard rinds. Avoid twisting the blade, and move food across the board with the spine rather than the edge.
    • Hone regularly to keep the edge aligned between sharpenings, using a rod such as the Shun Classic 9-inch Combi Honing Rod.
