The Matfer Bourgeat 6 1/4-inch cake ring is bottomless, making the removal of cake easy. It is used for creating layered cakes, mousse cakes and cheesecakes with straight, even sides.

Set the ring on a lined tray, build the layers inside it and chill until firm; a little warmth from a torch or warm towel releases the ring. For individual desserts, see the mousse ring.
