Paring Knives

Smooth or serrated, by definition a paring knife is used in hand and up off of the cutting board. Paring knives come in three basic shapes, although the names of these shapes may vary by distributer. Ranging from 3 to 4.5 inches in length, spear point parers can be identified by the shape of their blade the spine and tip of which meet in the immediate center of the knife. Spear points are the most common style of paring knife manufactured. The second style is known as a sheepsfoot parer although this shape is sometime referred to as kudamono. The straight edged spine of a sheepsfoot parer is distinct in that it rounds down to meet the dead flat edge of the knife. The last shape of paring knife available is known as a birds beak peeler or parer. This hook shaped blade is ideal for specialized tasks like fluting mushroom caps and is the perfect tool for executing the French seven sided cut known as tourné.

  • Zwilling Four Star 4-Inch Paring Knife (1001542)

A precision tool for the small, controlled cuts your chef’s knife can’t handle. The Zwilling Four Star 4-Inch Paring Knife is designed for detail work where control matters most. From peeling fruit and segmenting citrus to trimming proteins and creating garnishes, this compact blade gives you the accuracy and maneuverability that larger knives can’t provide. The slightly longer 4-inch blade offers more versatility than a traditional 3-inch paring knife, giving you additional reach for slicing small fruits, herbs, and aromatics while maintaining full control for in-hand work. Forged in Solingen, Germany from a single piece of Zwilling’s proprietary high-carbon stainless steel, the blade is manufactured using the SIGMAFORGE process for strength and balance. It is then ice-hardened using the FRIODUR process, improving durability, corrosion resistance, and long-term edge retention. The Four Star series features a seamless, molded polypropylene handle that provides a secure, comfortable grip while eliminating gaps where food and moisture can collect. An integrated finger guard creates a safe transition from blade to handle, helping maintain control during precision work. Learn More

  • Shun Classic 4-inch Paring Knife (DM0716)

The Shun 4-inch Classic Paring Knife is for cooks who want a paring knife with additional reach. Its longer blade covers the full range of in-hand work, including peeling, coring, trimming, and decorative cuts, and it extends that work to larger produce such as extra-large potatoes and apples, which a shorter parer must work around. On the cutting board, it minces garlic cloves and ginger with the same control. Because it shares the Damascus-clad blade and D-shaped handle of the entire Shun Classic line, it pairs naturally with a Classic chef’s knife or completes an existing Classic collection.
FeaturesVG-MAX cutting core: Shun’s proprietary steel is strong, fine-grained, and resistant to wear and corrosion. It takes a very keen edge and holds it through extended prep, so the knife needs sharpening less often.Stainless Damascus cladding: Layered stainless steel surrounds and supports the core, adds stain resistance, and helps food release from the blade, so slices of apple or potato fall away cleanly rather than clinging.Hand-sharpened double-bevel edge: The fine, symmetrical edge passes cleanly through tomato skins and delicate garnishes, and it serves left- and right-handed cooks equally well.D-shaped ebony PakkaWood handle: The handle is comfortable in either hand, durable enough for daily use, and does not harbor bacteria.Full composite tang: The composite construction keeps the knife light and balanced, giving precise control of the tip during close in-hand work.Handcrafted in Seki City, Japan: Each Shun Classic knife requires at least 100 individual steps to complete in Seki City, one of Japan’s most important blade-making centers since the 13th century.Free lifetime sharpening: Shun offers free lifetime sharpening, so the knife can be professionally sharpened by the manufacturer whenever its edge needs restoring.
