Paring Knives

Smooth or serrated, by definition a paring knife is used in hand and up off of the cutting board. Paring knives come in three basic shapes, although the names of these shapes may vary by distributer. Ranging from 3 to 4.5 inches in length, spear point parers can be identified by the shape of their blade the spine and tip of which meet in the immediate center of the knife. Spear points are the most common style of paring knife manufactured. The second style is known as a sheepsfoot parer although this shape is sometime referred to as kudamono. The straight edged spine of a sheepsfoot parer is distinct in that it rounds down to meet the dead flat edge of the knife. The last shape of paring knife available is known as a birds beak peeler or parer. This hook shaped blade is ideal for specialized tasks like fluting mushroom caps and is the perfect tool for executing the French seven sided cut known as tourné.

  • Shun Kanso Paring Knife 3.5-inch (SWT0700)

The Art of Functional Simplicity: Shun Kanso 3.5" Paring Knife In Japanese design, 'Kanso' represents a philosophy of simplicity—eliminating the unnecessary to focus on what truly matters. The Shun Kanso Paring Knife (SWT0700) embodies this principle by stripping away flashy aesthetics in favor of raw, industrial performance. While other blades rely on decorative Damascus cladding, the Kanso relies on a solid piece of highly refined AUS10A stainless steel. This high-carbon, vanadium-enriched alloy allows for an incredibly thin, 16-degree double-bevel edge that glides through shallots, cores strawberries, and skins ginger with zero resistance. The standout feature for both the line cook and the home enthusiast is the 'Heritage' finish. This tumbled, matte look isn't just for style; it is specifically engineered to hide the inevitable scratches that come with heavy daily use. It gives the knife a timeless, weathered aesthetic that looks better as it ages. The handle is crafted from Tagayasan wood—known in Japan as 'Iron Sword Wood'—which is remarkably dense and durable. The full-tang construction is secured by stainless steel rivets, providing the perfect balance and weight distribution required for intricate off-board peeling and detail work. Whether you are de-veining shrimp for a dinner service or precisely segmenting citrus for a morning garnish, the Kanso paring knife provides the tactile feedback and edge retention required for elite-level prep. • Suncraft Senzo Clad 90mm Parer

The Suncraft Senzo Clad paring knife is a beautifully crafted blade that takes a razor sharp edge, holds it well and is easy to maintain with a honing steel. Paring knives are used for precise detail work and for cuts made "in-hand" where both the knife and the product being cut are held off of the board. The ability to control and manipulate the blade is especially important when using a knife in this fashion. The Senzo Clad paring knife has an extremely comfortable hand that is easy to grip and very well suited for this traditional paring work. The wide spearpoint blade is perfectly shaped to peel, trim and core a range of fruits and vegetables. Aside from blade and handle shape an important consideration when shopping for a paring knife is edge retention; paring knives can be very difficult to sharpen on stones due to the small size of the blade. This knife is ground evenly (50/50 bevel) meaning it can be sharpened with a draw sharpener or other guided manual or electric sharpener. It can also be maintained with a steel or ceramic honing rod. This is an all around fantastic paring knfie that would be well suited for either commercial or home use.  Learn More
