Paring Knives

Smooth or serrated, by definition a paring knife is used in hand and up off of the cutting board. Paring knives come in three basic shapes, although the names of these shapes may vary by distributer. Ranging from 3 to 4.5 inches in length, spear point parers can be identified by the shape of their blade the spine and tip of which meet in the immediate center of the knife. Spear points are the most common style of paring knife manufactured. The second style is known as a sheepsfoot parer although this shape is sometime referred to as kudamono. The straight edged spine of a sheepsfoot parer is distinct in that it rounds down to meet the dead flat edge of the knife. The last shape of paring knife available is known as a birds beak peeler or parer. This hook shaped blade is ideal for specialized tasks like fluting mushroom caps and is the perfect tool for executing the French seven sided cut known as tourné.

  • F. Dick Premier Plus 2 3/4 in. Bird's Beak Peeler

In a professional kitchen, a bird’s beak knife is a precision instrument, not just a small paring tool. The F. Dick Premier Plus 2 3/4 inch Peeler is engineered specifically for the thumb-pivot motion required for tourne cuts and spherical vegetable shaping. Unlike stamped alternatives that flex under pressure, this fully forged blade provides a stable, rigid platform that follows the natural contours of round produce with zero chatter. Hands-on testing reveals the distinct advantage of the Premier Plus bolster. The transition from the handle to the spine is smooth, allowing for a deep pinch grip that doesn't cause hot spots during a four-hour prep shift. The X50CrMoV15 high-carbon stainless steel is ice-hardened to 56 HRC, creating a balance where the edge remains aggressive through crates of potatoes but responds immediately to a ceramic honing rod when touch-ups are needed. What sets this German-made peeler apart is the hygienic execution. The handle material is molded around the tang and bolster without gaps or rivets, eliminating the microscopic crevices where organic matter and bacteria typically collect. This makes it a preferred choice for chefs working under strict health and safety audits. Whether you are fluting mushrooms or peeling stone fruits, the weight distribution is centered at the bolster, providing a nimble feel that reduces wrist fatigue during repetitive tasks. Learn More
