Fillet Knives

Used almost exclusively for the preparation of fish, fillet knives vary greatly in terms of flexibility and width. When deciding what filet knife to purchase one ought to consider the tasks for which the knife will be used. Greater flexibility is advantageous for use on soft boned species like salmon and can be quite helpful when making center line cuts through flat fish like halibut. Stiffer filet knives are better suited for use on large salt water fish with tougher bones. Ultimately it is a matter of preference and we often find that you will be best served by selecting the degree of stiffness to which you have become accustomed.

  • Dexter Traditional 8" Flexible Fillet Knife - Beechwood Handle

This Dexter 8 inch stainless steel fillet knife is very popular for fishermen. It has a good balance between flexibility and strength. Strong enough to gut and cut the fillets without deflection around the bones and flexible enough to make easy work of removing the skin. High carbon dex-steel and a beechwood handle. Made in USA The Gold Standard for Professional Fish Processing For generations, the Dexter-Russell Traditional Series has been the heartbeat of the commercial fishing industry. The Dexter 8" Flexible Fillet Knife (SKU: 10893 / S2333-8PCP) represents the modern evolution of this American heritage. While veteran fishermen may remember the original carbon steel version, this latest iteration utilizes proprietary Dex-Steel™—a high-carbon, high-chromium stainless steel that delivers the legendary ease of sharpening of carbon steel while providing the superior corrosion resistance necessary for harsh saltwater environments. The 8-inch blade is meticulously engineered for the 'Sweet Spot' of fish processing. At a precise 0.5 inches wide with a slim 1.7mm spine, it offers the surgical flexibility needed to glide effortlessly over rib bones and under skin with minimal resistance. Yet, the 55/56 Rockwell hardness ensures the blade retains enough backbone to gut larger species without deflection or 'wandering' in the cut. This delicate balance of strength and suppleness makes it the preferred tool for species ranging from Snapper and Walleye to Striped Bass. The handle is crafted from genuine, sustainably sourced Beechwood, offering a warm, traditional grip that synthetic handles cannot replicate. Over time, the wood develops a unique micro-texture that conforms to the user's grip, providing superior control even when wet. Combined with a precision-ground 50/50 bevel, this knife is more than just a tool; it is an extension of the angler's hand, proudly manufactured in the United States to meet the most demanding standards of culinary and marine performance. Whether you are a professional deckhand processing hundreds of pounds of catch or a weekend enthusiast who values professional-grade equipment, this knife offers the reliability that has made Dexter-Russell a household name in coastal communities for over two centuries. • Dexter Russell Sani-Safe 7-inch Fillet Knife

Built for the Salt, the Slime, and the Sixteen-Hour Shift Experience the industry-standard fillet knife that professional fishmongers and commercial captains rely on for high-yield precision and uncompromising food safety. In high-volume seafood processing, your knife is an extension of your hand. The Dexter Russell Sani-Safe 7-inch Fillet Knife (S133-8-PCP) is engineered to survive the brutal realities of the commercial cleaning station. While many knives claim flexibility, this blade is ground specifically to provide the tactile feedback necessary to glide over the rib cage of a snapper or follow the skin of a salmon without losing a single gram of yield. At the core of this tool is Dexter’s proprietary DEXSTEEL. This isn't just standard stainless; it is a high-carbon, stain-free alloy optimized for edge retention against abrasive scales and acidic brines. The blade is hand-ground and honed to a razor edge, ensuring that your first cut of the day is as effortless as your last. For the professional line cook or fishmonger, this means fewer trips to the sharpening stone and more time focused on production. The Sani-Safe handle is the gold standard for a reason. Its white polypropylene construction is textured to provide a 'tacky' grip even when covered in fish oils or water. The Zwilling Four Star 7-inch Flexible Fillet Knife is expertly crafted to provide the precision and control needed for delicate butchery tasks. Its long, slender blade is specifically designed for filleting whole fish, allowing you to move cleanly along the backbone and under the skin with ease. • F. Dick ErgoGrip 7 in. Semi-Flex Fillet Knife

The F Dick ErgoGrip 7 in. Semi-Flex Fillet knife is used for loosening skin and bones and for filleting. The filleting knife, also called a fillet knife, makes it easy to remove the fillets with little waste. However, the knife can also be used in meat processing to easily remove tendons and skin and then to portion the meat. A filleting knife is also an essential piece of equipment for every angler, as it can be used to process the fish immediately after it is caught. What makes this knife special is its long slender shape with its semi-flexible blade. The blade is slightly curved upwards, becoming slightly wider in the front area than in the middle. This gives it more surface area, allowing you to make a long, pulling cut. The elastic, semi-flexible blade allows you to remove the fillets from the bone precisely and easily. The blade makes a slight wave motion when cutting, which allows it to cut particularly close to the bone, minimising waste. With the curved, sharp tip, you can easily reach the meat between the bones of large fish, as you can position the knife tip and insert it very precisely. The shape of the knife also simplifies the fine work of removing the fillet. Learn More
