Carving & Slicing Knives

Carving and slicing knives are designed to be used when slicing meat. Both carving and slicing knives have long, thin, blades that typically range from 8 to 14 inches in length. This enables the user to create a long slice of meat or fish in a single stroke avoiding unnecessary back and forth sawing motions that tear at flesh and jeopardize the cleanliness of the cut. The thinness of the blade lends versatility to the carving knife which is often used by chefs when slicing wellington, cordon bleu, and other breaded dishes. Carving knives come to a sharp point unlike slicers also known as slicing knives. The tip of a slicing knife has been rounded for the protection of anyone on the other side of a carving station who may be overly eager to reach in for an extra helping of roast beef.  Note that a Granton or Kullenschliff edge is most appropriate when applied to this knife shape as opposed to any other.

  • I.O. Shen MSH Ryoba Carver 8.25-inch

A Michelin-Standard Hybrid That Redefines Precision Slicing When two-Michelin-star chef Daniel Clifford designed the I.O.Shen MSH Ryoba, he wasn't looking for another standard carver. He needed a tool that could handle the intricate work of a 12-hour service—slicing delicate proteins while possessing the structural integrity to clear small bones and cartilage without damaging the primary edge. The result is the MG4200, an 8.25-inch masterpiece that bridges the gap between Japanese surgical sharpness and Western heavy-duty utility. At the heart of this blade is I.O.Shen's signature Triplex Steel Technology. Unlike cheaper stamped blades or even traditional single-alloy forged knives, Triplex features a high-carbon Erdon 6000 core (Rockwell 62) sandwiched between two layers of softer stainless steel. This construction creates a 'self-honing' effect as the outer layers wear, while the core maintains a razor-sharp 15-degree edge through hundreds of cuts. Whether you are portioning 40 lbs of brisket or filleting a delicate sea bass, the edge remains consistent. What truly distinguishes the Ryoba is its 'toothed' heel. Inspired by the Japanese Ryoba saw, this serrated section allows you to initiate cuts through tough skin or small bones that would normally dull a standard carving edge. It gives you the confidence to use the front 80% of the blade for flawless, clean-slice presentation, while relying on the heel for the heavy lifting. The medium-sized handle and balanced weight distribution make it a favorite for chefs who find traditional carvers too cumbersome for fast-paced line work. Learn More

Engineered for Flawless Slicing The heart of the G-47 Sujihiki is its long, narrow, and remarkably sharp blade. This specific design allows for: Effortless, Long Strokes: The generous 250mm length enables you to make long, uninterrupted cuts in a single motion. This minimizes cellular damage to the food, preserving its natural juices, texture, and flavor – crucial for delicate items like raw fish or perfectly cooked roasts. Precision & Control: The slim profile of the Sujihiki blade reduces friction, allowing it to glide through food with minimal resistance, ensuring clean, precise slices every time. Versatility: While a master at slicing boneless fish, this knife also excels at carving boneless roasted meats (beef, pork, lamb), poultry, terrines, and even large fruits or vegetables where long, clean cuts are desired. Signature Global Quality & Design CROMOVA 18 Stainless Steel: Crafted from Global's proprietary CROMOVA 18 high-carbon stainless steel, the blade is ice-tempered and hardened to Rockwell C56-58. This ensures exceptional edge retention, stain resistance, and the ability to achieve and maintain an incredibly sharp, acute edge. Razor-Sharp Double-Bevel Edge: The blade is ground steeply to a point on both sides (typically 15-17 degrees per side), resulting in a razor-sharp edge that performs with precision. This double-bevel design makes it suitable for both right and left-handed users. It also enables this knife to be easily re-sharpened with draw sharpeners unlike many other sashimi slicers that can only be sharpened by hand on stones. Iconic Hollow Handle: The unique, seamless hollow stainless steel handle is filled with sand to achieve the perfect weight and balance. Its ergonomic, dimpled design provides a secure, comfortable, and slip-resistant grip, even with wet or greasy hands, reducing fatigue during extended use. • Miyabi Koh 9.5-inch (240mm) Slicer

The Precision of a Scalpel, the Soul of a Samurai Elevate your culinary artistry with the Miyabi Koh 9.5-inch (240mm) Slicer, a tool specifically designed for the chef who demands surgical precision. Known in Japan as a Sujihiki, this knife is the long, thin-bladed alternative to the Western carving knife. Whether you are portioning a delicate tuna loin for sashimi or carving a prime rib roast, the extended 240mm length allows for long, continuous drawing cuts. This single-motion technique prevents the 'sawing' motion that tears delicate proteins, ensuring clean surfaces that lock in juices and preserve texture. Advanced Metallurgy Meets Traditional Craft At the heart of this blade is the revolutionary FC61 Fine Carbide Stainless Steel. This advanced alloy bridges the gap between two worlds: it offers the legendary edge retention of high-carbon Japanese steel while maintaining the robust toughness and corrosion resistance typically found in high-end German cutlery. With a 61 Rockwell Hardness, the edge is exceptionally durable, yet remains approachable for sharpening. Each blade undergoes the proprietary FRIODURx2 ice-hardening process, a specialized thermal treatment that optimizes the molecular structure of the steel for maximum sharpness and flexibility. Handcrafted Excellence from Seki, Japan Every Miyabi Koh knife is handcrafted in Seki, the historical capital of Japanese sword-making. Artisans employ the Honbazuke three-step honing process, hand-finishing each edge to a staggering 9.5 to 12-degree angle. This results in a 'katana' edge—a mirror-polished tribute to the samurai swords of old. The aesthetic is completed by a sandblasted katana edge and an embossed MIYABI logo, signifying a product that is as much a work of art as it is a professional tool. Learn More
