Carving & Slicing Knives

Carving and slicing knives are designed to be used when slicing meat. Both carving and slicing knives have long, thin, blades that typically range from 8 to 14 inches in length. This enables the user to create a long slice of meat or fish in a single stroke avoiding unnecessary back and forth sawing motions that tear at flesh and jeopardize the cleanliness of the cut. The thinness of the blade lends versatility to the carving knife which is often used by chefs when slicing wellington, cordon bleu, and other breaded dishes. Carving knives come to a sharp point unlike slicers also known as slicing knives. The tip of a slicing knife has been rounded for the protection of anyone on the other side of a carving station who may be overly eager to reach in for an extra helping of roast beef.  Note that a Granton or Kullenschliff edge is most appropriate when applied to this knife shape as opposed to any other.

  • F. Dick Superior 9 in. Semi-Flexible Carving Knife

    F. Dick Superior 9 in. Carving Knife is the perfect length for carving Game Hens, Chicken and Turkey. It has a pretty fair amount of flex, similar to that of a sole knife. As such, this knife works very well as a salmon slicer and for filleting fish. The Superior series was designed for professional as well as domestic use. A classic design with handle rivets and the lightweight design produce a knife that is safe to use. With the Superior knife series, Friedr. Dick has succeeded in perfectly combining a modern knife in shape and functionality with a traditional handle design with three rivets. The result is a perfectly shaped classic of exceptional quality. The continuous steel from blade to handle ensures a high degree of stability. The steel consists of a X50CrMoV15 high-quality alloy. These components ensure lasting edge retention and a long life time with the appropriate toughness and high corrosion resistance. Polish honing of the knife edges with a smooth cutting edge makes them even sharper, even faster, even better. The food to be cut is cut through exactly and not “sawed” or even squashed; this means that valuable flavors remain in the cut food. Learn More
  • Victorinox Fibrox Pro 10 in. Round Tip Slicer

Uniform Slicing Efficiency with Swiss Martensitic Precision When handling heavy roasts or delicate poultry in a high-volume kitchen, the physical feedback from your cutlery determines the quality of the final plate. The Victorinox Fibrox Pro 10-inch Round Tip Slicer is engineered specifically to bridge the gap between commercial durability and surgical precision. During testing, the first thing noticed is the tactile signature of the Fibrox handle; it features a micro-textured surface that maintains a high-friction coefficient even when exposed to animal fats, proteins, or moisture. This allows for a relaxed but secure grip, significantly reducing forearm fatigue during long shifts at the carving station. Technically, the blade is crafted from martensitic stainless steel, a high-carbon alloy that undergoes a specific tempering process to reach a Rockwell Hardness of 55/56 HRC. This hardness level is the 'sweet spot' for high-volume slicers: it provides enough rigidity to maintain a razor-sharp 15-degree edge while remaining ductile enough to be realigned quickly with a honing steel. The 10-inch length provides the necessary 'runway' for long, single-stroke pulls, which prevents the 'sawing' motion that shreds meat fibers and causes juice loss. The round-tip geometry is a deliberate safety and utility feature. In tight commercial lines, the absence of a sharp point reduces the risk of accidental punctures, while the lack of a bolster allows for full-length sharpening, ensuring the knife provides value for years of service. Whether you are portioning prime rib or slicing through dense root vegetables, the 50/50 symmetrical bevel ensures a straight, predictable path through every cut. Learn More

When you first grip the handle, the tactile feedback is immediate. Developed in consultation with professional chefs, the ergonomic handle features a unique bolster that provides a secure thumb rest and a comfortable finger guard, ensuring your hand doesn't fatigue during high-volume slicing tasks. The 9-inch blade is forged from high-quality X50CrMoV15 German stainless steel, hardened to 55-56 HRC. This specific hardness provides the ideal balance between extreme sharpness and the toughness needed to avoid chipping when navigating around poultry bones or dense holiday roasts. During testing, the long, thin profile of the blade allowed for long, sweeping strokes that produce uniform, restaurant-quality slices without the jagged 'sawing' effect common with shorter, duller blades. Whether you are carving a delicate smoked salmon fillet or a heavy prime rib, the weight distribution of this knife remains centered in the palm. The blade is ground at a precise 15° angle, offering a level of sharpness that rivals Japanese cutlery while maintaining the robustness of European steel.
