Pride Abrasives 600 Grit Water Stone (slate/blue-grey). Pride stones use a vitrifed bonding process rather than resin. Norton 4000/8000 Grit Combination Waterstone
The Norton 4000/8000 Grit Combination Waterstone creates an abrasive slurry during use, for effective sharpening with less pressure than oil stones. The 4000 grit is for maintaining and refining your blade's edge, and the 8000 grit is for polishing. The 4000 grit side requires some soaking and the 8000 can be used as a "splash and go". We recommend using the blue storage case for soaking the 4000 grit as this will allow the 8000 side to stay out of the water. Minonokuni 4000 Grit Waterstone
Minonokuni's 4000 grit waterstone is a traditional Japanese finishing stone, custom specified by Minonokuni's craftsmen for Knife Merchant and tested extensively in regular use here in our own kitchen. This stone gives excellent feedback, develops a slurry easily, and resists dishing, holding its flat surface well over repeated use. It leaves a mirror finish with a level of polish that is noticeably better than other stones of comparable grit. As a traditional waterstone, it should be soaked before use, typically until the bubbles stop rising. The surface should be kept wet throughout sharpening. Made in Japan and sized at 210mm by 70mm by 20mm (8.25 by 2.75 by 0.8 inches), it pairs naturally with a coarser stone for edge repair. We like to pair this stone with the Minonokuni 1000 grit waterstone. Naniwa 400 Grit Professional (Chosera) Stone
The Naniwa Professional 400 Grit Ceramic Stone is the coarsest stone in the Professional series. This stone is designed to cut very quickly and to remove a lot of steel. Although ceramic stones are by nature less aggressive than traditional or oil stones this stone does move a sustantial amount of steel. We recommend this stone for re-profiling, reshaping and thinning blades, removing chips, repairing tips and other heavy work that requires quick cutting. The 400 grit can also be used as an initial stone for confident sharpeners who want to speed up their work, but we don't recommend using this as your go-to primary stone. This will leave a fairly rough edge that needs to be followed by a smoother stone. We'd recommend moving from this stone to a 1000 grit before you finish on a high-grit polishing stone.
