Sharpening Steels

Sharpening Rods, also called Sharpening Steels and Honing Rods, are handheld tools used to hone or sharpen cutlery. They come in a variety of materials (mainly Steel, Ceramic and Diamond), a range of shapes (Round, Square, Oval and Flat), and varying degrees of courseness (smooth, polish, course, etc). We carry a very large selection of honing and sharpening steels and offer a breadth of information regarding the appropriate application of each tool. • Idahone 12-inch Coarse Ceramic Sharpening Rod, Hard Rock Maple Handle

The Idahone 12-inch Coarse Ceramic Sharpening Rod is for cooks whose knives have dulled past the point a fine rod or honing steel can recover, but who would rather not set up a whetstone each time an edge fades. Its coarse high-alumina ceramic removes steel faster than Idahone’s fine rods and restores a working edge in a few strokes. The long rod gives a chef’s knife or slicer room to travel its full length without running off the end.
What It Does for Your Knives Coarse ceramic abrasive: Cuts a fresh edge on knives dulled by regular use. A honing steel only straightens a rolled edge. Measured metal removal: The grit is somewhat finer than the coarse rods in Idahone’s V-type sharpeners, so the rod reworks an edge without the heavy stock removal of a sharpening system’s first stage. Long working surface: Accommodates 10-inch chef’s knives and slicers, so each stroke covers the edge from heel to tip. Wood handle with hanging ring: Provides a secure grip for steady strokes and keeps the rod within reach at the prep station.
Using the Coarse and Fine Rods Together The coarse rod does the corrective work, and a fine rod refines the result. Cooks who keep both on hand use the coarse rod when a knife no longer responds to honing, then finish on the Idahone 12-inch Fine Ceramic Sharpening Rod for a smoother, more refined edge. For routine maintenance of a knife that is still sharp, the fine rod alone is the better choice because it removes less steel. Learn More
  • Idahone 12-inch Fine Ceramic Sharpening Rod, Black Wood Handle

The Idahone 12-inch Fine Ceramic Sharpening Rod is for cooks who rely on long knives and want to keep them sharp between full sharpenings. A honing steel only pushes a rolled edge back into line. This high-alumina ceramic rod removes a small amount of steel with each stroke, so it sharpens and polishes the edge at the same time. Its finish is comparable to a fine Japanese whetstone, which makes it a maintenance tool between full sharpenings rather than a substitute for them.
What It Does for Your Knives Long working surface: Gives 10-inch chef’s knives, slicers and sujihiki room for a full stroke from heel to tip, so the entire edge receives even contact. Fine ceramic abrasive: Refreshes a working edge in a few light strokes and leaves a smooth, polished finish. Suited to harder steels: Because the rod abrades the edge rather than bending it, it suits the harder steels of many Japanese knives, which tend to wear or chip rather than roll. Fewer whetstone sessions: Regular use keeps an edge in service longer, so full sharpenings are needed less often.
Other Sizes and Grits For shorter knives or a smaller kitchen, the Idahone 10-inch Fine Ceramic Sharpening Rod, Black Wood Handle offers the same ceramic in a more compact length. The same fine rod is also available with a natural maple handle as the Idahone 12-inch Fine Ceramic Sharpening Rod, Hard Rock Maple Handle. When a knife no longer responds to the fine rod, the Idahone 12-inch Coarse Ceramic Sharpening Rod removes steel faster to restore the edge. Learn More
  • Idahone 12-inch Fine Ceramic Sharpening Rod, Hard Rock Maple Handle

The Idahone 12-inch Fine Ceramic Sharpening Rod is for cooks who maintain a full knife block, from paring knives to long slicers, and want one rod that serves all of them. A honing steel only pushes a rolled edge back into line. This high-alumina ceramic rod removes a small amount of steel, so it sharpens and polishes the edge at the same time. Its finish is comparable to a fine Japanese whetstone, which makes it a maintenance tool between full sharpenings rather than a substitute for them.
What It Does for Your Knives Long working surface: Accommodates 10-inch chef’s knives and slicers as readily as short knives, so one rod covers the whole block. Fine ceramic abrasive: Refreshes a working edge in a few light strokes and leaves a smooth, polished finish. Suited to Japanese and Western knives: Because the rod abrades the edge rather than bending it, it maintains softer German steels and the harder steels of many Japanese knives, which tend to wear or chip rather than roll. Natural maple handle with hanging ring: Provides a secure grip for steady strokes and keeps the rod within reach at the prep station.
Other Sizes and Grits The same rod is available in a shorter length as the Idahone 10-inch Fine Ceramic Sharpening Rod, Hard Rock Maple Handle, and with a black handle as the Idahone 12-inch Fine Ceramic Sharpening Rod, Black Wood Handle. When a knife no longer responds to the fine rod, the Idahone 12-inch Coarse Ceramic Sharpening Rod removes steel faster to restore the edge, and the fine rod then refines it. Learn More

  • Dexter 12" x .75" Diamond Sharpening Steel

Engineered for the Grind: The Professional’s Fast-Track to a Razor Edge In a high-volume kitchen, a dull knife isn't just a nuisance—it’s a safety hazard and a bottleneck. The Dexter 12" x .75" Diamond Steel is not a traditional honing rod; it is a precision sharpening instrument. While stainless steel rods simply realign a rolled edge, this diamond-coated powerhouse actually removes a microscopic layer of metal. This makes it the essential tool for chefs and butchers who need to restore a neglected edge quickly without returning to a whetstone mid-shift. Crafted in the United States by Dexter-Russell, the largest manufacturer of professional cutlery in America, this tool reflects over 200 years of metallurgical expertise. The 12-inch length is the 'Goldilocks' size for professional environments, providing a long, safe stroke for everything from 6-inch boning knives to 10-inch chef’s knives and even longer slicing blades. The .75-inch diameter provides a significant surface area contact, ensuring more uniform sharpening and greater stability than thinner consumer-grade rods. Whether you are working in a commercial meat-processing plant or a high-end bistro, the diamond abrasive surface works to eliminate nicks and refine the blade's geometry. This rod bridges the gap between daily honing and professional stone sharpening, significantly extending the time between full regrinds and keeping your Dexter-Russell, Wusthof, or Victorinox knives performing at a factory-sharp level. • Ultimate Edge 12 in. Oval Diamond Sharpening Rod

Professional-Grade Edge Restoration: The 12-Inch Diamond Standard Is your favorite chef's knife struggling to pass the 'tomato test'? Most traditional honing steels simply realign a folded edge; they don't actually sharpen the blade. The Ultimate Edge 12 in. Oval Diamond Sharpening Rod is the bridge between a basic hone and a full stone-grind. By utilizing high-quality monocrystalline diamonds, this rod actually removes a microscopic amount of steel to recreate a sharp, biting edge on even the hardest alloys. The Engineering of a Perfect Edge At 600 grit, this rod is specifically engineered for 'medium' maintenance. It is aggressive enough to sharpen a dull blade that has lost its utility, yet fine enough to leave a smooth, refined finish that excels in professional environments. The 12-inch length provides the necessary travel for large 8-inch to 10-inch chef knives, ensuring a single, fluid stroke from heel to tip. Why the Oval Profile Matters Unlike traditional round rods that offer a narrow point of contact, the Oval shape of the Ultimate Edge rod provides a wider surface area. This increases the contact between the blade and the diamond abrasive, giving you more control, reducing the time spent sharpening, and ensuring a more consistent angle across the entire length of your knife. Convenience Meets Durability Designed for the fast-paced professional kitchen, this tool requires no messy oils or water. It is incredibly lightweight, reducing wrist fatigue during long prep sessions. Proudly Made in the USA, the M12W is built to withstand the rigors of commercial use while being simple enough for the home enthusiast to master in minutes. Learn More
  • Dexter-Russell 10-Inch Smooth Butcher Steel

The Dexter-Russell 10-inch smooth butcher steel, also called a polishing steel, is a daily maintenance tool for butchers, meat cutters and cooks who break down protein with Western knives. Its polished surface realigns a rolled or wavering edge without grinding it away, so a few strokes between cuts keep a boning, breaking or chef’s knife cutting cleanly and delay the next session on a sharpening stone.FeaturesSmooth, polished surface. The steel straightens and burnishes the edge rather than removing metal, which preserves the blade and makes the steel suitable for frequent use throughout a shift.Magnetized rod. The steel holds the fine metal particles released during honing instead of letting them fall onto the cutting board or the product.Nickel-plated, high-carbon file steel. A hard high-carbon core carries a nickel-plated finish that forms the polished working surface.Guarded polypropylene handle with heavy-duty ring. The guard keeps the hand behind the working length of the rod, and the ring allows the steel to hang within reach at the workstation.Made in the USA. Dexter-Russell, which traces its history to 1818, builds its Traditional line of butcher steels in the United States. How It ComparesAmong the 10-inch polishing steels we carry, the Dexter-Russell and the Granton 10 in. Packing House Steel are both magnetized. The Granton is made in Sheffield, England. The F. Dick 10 in. Non-Chromium Polishing Steel is stainless and left unplated, so cutters can scuff its surface with sandpaper to suit their preference. All three suit the softer steels used in working protein knives such as Dexter-Russell and Victorinox. Learn More
