  • The sticking knife is a basic knife with a wide range of uses. The sticking knife originally owes its name to “sticking”, i.e. bleeding out livestock. In practice, it is also often used as a trimming knife. However, it is also still used in its original application with animals for an exact vein incision. “Stabbing”, as it is called, takes place after the animals have been stunned. The pointed blade of the sticking knife can be used to make a precise and quick vein incision, allowing them to bleed out completely before being cut and processed further. Sticking knives are thus one of the most important utensils of a butcher, but they are also important tools for hunters or farmers who are self-suppliers and marketers. In combination with other butcher's knives such as the skinning knife or the gut and tripe knife, they are a basic part of any butcher's equipment.

  • Details

The sticking knife features a narrow blade shape with a pronounced tip and is also available in a pointed version. The tip is designed to deliver precise, pinpoint penetration. These knives are offered in blade lengths of 13, 15, 18, and 21 cm, with the appropriate length determined by the size of the animal being processed. Handle options are available in both the ErgoGrip and ExpertGrip butcher’s knife series. High-quality butcher’s knives are engineered to be exceptionally sharp, durable, and resilient, while incorporating essential safety features such as an ergonomically shaped handle with a finger guard. They are also designed to meet hygienic food safety requirements. In slaughterhouses and cutting plants, functional handles are essential to ensure ergonomic and safe operation. The knife is designed to sit securely and comfortably in the hand without slipping, while the finger guard helps prevent accidental contact with the blade.

These sticking knives are manufactured using high-quality knife alloys (X55CrMo14) and carefully selected material compositions for both blade and handle. A balanced hardness of 56 HRC reduces material wear and ensures long-lasting edge retention, minimizing the need for frequent sharpening. Each blade undergoes an individual case-hardening process that is closely monitored to achieve optimal hardness and structural integrity. The cutting edge is finished with a polished edge, enhancing sharpness, cutting performance, and overall efficiency through refined blade geometry.

Professional-grade quality ensures that the knife maintains its cutting performance and edge retention over an extended period, allowing for effortless and fatigue-free use. Reduced sharpening requirements help minimize strain on the wrists, while a consistently sharp blade lowers the risk of accidents and reduces physical stress associated with cutting tasks. The polished blade surface promotes a high level of hygiene by limiting residue adhesion, improving corrosion resistance, and making cleaning easier. The seamless transition between blade and handle eliminates gaps where debris could accumulate, and the handle material resists grease, dirt, heat, shock, and abrasion.

Within the ErgoGrip series, sticking knives are available in a variety of handle colors to support different applications and work areas. This color-coding system enhances hygiene practices by allowing clear differentiation between processing categories such as beef and veal, pork, and sheep or lamb. These features contribute to the knives meeting rigorous hygiene and quality standards, including certification with the American NSF seal.
