The Wüsthof Classic Ikon 11-Piece Set is for cooks who prepare a wide range of dishes and want a dedicated blade for each kind of work, from bread and vegetables to breaking down poultry. It includes eight knives, among them a santoku and a boning knife, along with a honing steel, shears, and a 15-slot block.

Why It Works

• Chef’s knife and santoku: Two primary prep shapes, so the santoku can take vegetables and the chef’s knife can take proteins, or each cook can use the shape they prefer.


• Boning knife: A narrow blade for separating meat from bone, trimming silverskin, and breaking down chicken.


• Bread knife: A long serrated blade for crusted loaves and layer cakes.


• Four small blades: Two paring knives, a straight utility knife, and a serrated utility knife cover peeling, trimming, and small-format slicing.


• Half bolster: The bolster stops short of the edge, so the full length of the blade can be sharpened.


• Rear bolster and contoured handle: A steel end cap balances the blade, and the curved handle accommodates both a handle grip and a pinch grip.

Compared with the Classic Ikon 8-Piece Set, this set adds the santoku, boning knife, and bread knife, which makes it suited to cooks who bake bread, butcher their own poultry, or cook vegetable-heavy meals. It does not include steak knives.
