  • Norton IM200 3-Stone Multi-Oilstone Sharpening System - 8 Inch

The Professional Standard for Sequential Bench Sharpening The Norton IM200 Multi-Oilstone represents the industrial benchmark for manual knife maintenance. This is not a hobbyist tool; it is a high-throughput sharpening station designed for chefs and butchers who require consistent, repeatable edge geometry. Unlike single stones that require frequent soaking and cleanup, the IM200 utilizes a rotational reservoir system. The stones are housed in a heavy-duty base that keeps the unused abrasives submerged in a bath of Norton honing oil, ensuring they are saturated and ready for immediate use. The system utilizes a precise three-step progression. The Coarse Crystolon (Silicon Carbide) stone is purpose-built for rapid metal removal, allowing you to reset a bevel or repair a chipped edge in minutes. The Medium Crystolon stone refines that edge, removing the deep scratches left by the coarse abrasive. Finally, the Fine India (Aluminum Oxide) stone polishes the apex to a refined, toothy edge that excels at slicing through fibrous proteins and dense vegetables without slipping. Measuring 8 inches by 2 inches, this unit provides a sufficient surface area for full-stroke sharpening of everything from a 3.5-inch paring knife to a 10-inch chef’s knife. The compact footprint of the IM200 makes it the ideal choice for smaller professional stations or serious home kitchens where space is at a premium, yet professional results are non-negotiable. • Norton 16 oz. Sharpening Stone Lubricant

Professional-Grade Lubrication for a Frictionless Edge Sharpening is a game of heat and friction management. Without the correct lubricant, even the highest-quality sharpening stone will eventually 'glaze'—a process where microscopic metal particles, known as swarf, become embedded in the stone's pores, rendering it useless. Norton 16 oz. Sharpening Stone Lubricant is engineered specifically to prevent this failure, ensuring your India or Crystolon stones remain aggressive and effective for years. The Science of Swarf Suspension This highly refined mineral oil is formulated with a specific viscosity that lifts metal filings off the stone’s surface during the sharpening stroke. By keeping these particles in suspension, the oil prevents them from clogging the abrasive grit. Unlike generic oils or lower-grade lubricants, this Norton formula is processed to meet strict United States Pharmacopoeia (USP) standards. This means it is entirely food-safe, a non-negotiable requirement for professional chefs, butchers, and home cooks who sharpen their tools in the same environment where they prep food. Why Professionals Choose Norton In high-volume environments like butcher shops or industrial kitchens, speed and hygiene are paramount. This oil does not cake, thicken, or turn rancid over time. It remains fluid, allowing for easy cleanup with a simple wipe. Whether you are performing a heavy repair on a coarse Crystolon stone or finishing a delicate edge on a Fine India oil stone, this lubricant provides the thermal stability needed to prevent localized heat buildup, which can temper the steel and ruin a blade’s hardness. Made in the USA, it represents the gold standard for traditional oil-stone maintenance. Learn More
  • Norton 1000/4000 grit Combination Waterstone

These stones vary from the Japanese in two key areas.
The grit size is just a bit coarser. (There is no International Standard for grit sizes)
The bonding agent is softer than a premium Japanese stone. I don't know that they actually wear faster though, because they produce results much more quickly. I really like the finish produced by the 4000 grit and we use it regularly.
We actually like these stones quite a bit. Nice size, sturdy plastic box that also serves as a stand for the stone. Be very careful to not push the edge into the stone. Draw the knife towards you with the edge facing away. Please call or email with any questions.

  • Norton 4000/8000 Grit Combination Waterstone

The Norton 4000/8000 Grit Combination Waterstone creates an abrasive slurry during use, for effective sharpening with less pressure than oil stones. The 4000 grit is for maintaining and refining your blade's edge, and the 8000 grit is for polishing. The 4000 grit side requires some soaking and the 8000 can be used as a "splash and go". We recommend using the blue storage case for soaking the 4000 grit as this will allow the 8000 side to stay out of the water. The blue plastic box features rubber feet, and can be used as a holder during use. Learn More
