  • Matfer Bourgeat 10 1/8 in. Carbon Steel Fry Pan

The Professional's Workhorse: Matfer Bourgeat Black Carbon Steel For chefs who demand the thermal mass of cast iron without the weight or the fragile coating of chemical non-stick, the Matfer Bourgeat 10-inch Carbon Steel Fry Pan (062003) is the definitive choice. This isn't a consumer-grade skillet; it is a heavy-duty tool built to withstand 18-hour shifts. The black carbon steel construction allows for rapid temperature response, making it as effective for delicate pan-seared scallops as it is for a heavy ribeye. What sets the Matfer Bourgeat apart is its structural integrity. Unlike pans with stamped rivets that collect bacteria and carbonized fat, this pan features a high-quality welded steel handle. This creates a perfectly smooth interior cooking surface, allowing your spatula to move unimpeded while ensuring total food safety and hygiene. Over time, as you season this pan with oil and heat, it develops a natural patina that outperforms PTFE coatings while remaining entirely PFOA-free. Whether you are deglazing on a high-BTU gas range or utilizing the precision of a modern induction hob, the 062003 remains perfectly flat and responsive. This is a pan designed to be passed down through generations of cooks, growing more effective with every service. Learn More
  • F. Dick 1905 Series 7 in Carving / Boning Knife

The Friedrich Dick 1905 Boning Knife is an excellent multi-purpose blade that is fully forged, with a reduced bolster for comfort. This knife uses an excellent blend of high carbon steel with a mix of chromium and molybdenum for reduced wear and increased edge retention. I've never seen this shape before in German steel, but it is one of my favorites. Excellent for removing silver skin from tenderloins or veal legs. Great for trimming fat from the backside of ribs. Can be used as any other boning knife, but I also find this shape to be much easier to re-sharpen. Learn More
  • F. Dick ErgoGrip 6 in. Semi-Flexible Boning Knife

The F Dick ErgoGrip 6 in. Semi-Flex Boning Knife can be used for a variety of butchering tasks but is the ideal flexibility and length for dismantling poultry like duck, chicken and turkey. The boning knife is used to cleanly separate the bone from the meat, a process known as boning. It is also used for skinning meat and poultry and cutting through tendons. The boning knife’s primary use is it to separate meat from the bone. Hardly any other knife is subjected to such stress and strain as a boning knife. It must prove itself as a reliable and safe helper in all work processes. In the meat industry, in slaughtering and cutting, as well as in butchers' shops, the boning knife must continually demonstrate its quality. The knife must be particularly easy to grip, as it requires frequent handling. The boning knife is held like a dagger and guided along the bone so that the meat is removed cleanly and evenly. When it is used for shearing, i.e. cutting meat, the knife is held in the normal gripping position, as it is when removing tendons or skin. Our boning knives are specially designed for this professional use in terms of blade shape, handle design and the materials used. Learn More
  • MAC 8 1/2" Ceramic Sharpening Rod (SR-85)

A ceramic honing rod designed to maintain and lightly refine the edge of your knife between sharpenings. The MAC 8 1/2-inch Ceramic Sharpening Rod is an essential maintenance tool for the anyone who uses high-carbon or Japanese stainless steel knives. While traditional steel honing rods are designed primarily to realign a "rolled" edge on softer Western alloys, this ceramic rod possesses a superior hardness that allows it to gently remove a microscopic amount of metal. This dual action not only realigns the edge but also polishes and hones it, effectively extending the interval between full stone sharpenings. The fine ceramic surface (approximately 1200–2000 grit) is specifically engineered to be harder than the 59–61 Rockwell steel found in the MAC Professional and Japanese Damascus lines. For the skilled cook, this means the ability to restore a "razor" feel with just a few light strokes without the aggressive abrasion of a diamond rod. The handle features a sturdy guard to protect the user's hand and a hanging ring for convenient station storage. This is the recommended maintenance tool for any knife where edge geometry and surgical precision are the highest priority. Over time, metal residue will build up on the rod. Clean it with a mild abrasive cleaner or scouring pad to maintain effectiveness.
Who This Is For Users who want to maintain their knife’s edge between sharpenings Cooks using harder steels, including many Japanese knives Anyone looking for more effective edge maintenance than a standard steel rod Not ideal for: Repairing chipped or damaged edges (requires sharpening stones or professional service) Learn More

  • MAC Black Ceramic 10 1/2-inch Honing Rod

A ceramic sharpening rod differs from a steel honing rod in that it is intented to remove a bit of metal. A steel honing rod is intended to straighten the edge of a softer (German/American) steel knife that has rolled with use. A ceramic rod will remove the burr from an edge and may be used in conjunction with a fine steel honing rod. Ceramics are often preferred for hard Japanese steels that tend to dull without the edge rolling. As a rule of thumb, we use ceramic on steels greater than 60 Rockwell hardness.  Learn More

  • Ultimate Edge 12 in. Oval Diamond Sharpening Rod

Professional-Grade Edge Restoration: The 12-Inch Diamond Standard Is your favorite chef's knife struggling to pass the 'tomato test'? Most traditional honing steels simply realign a folded edge; they don't actually sharpen the blade. The Ultimate Edge 12 in. Oval Diamond Sharpening Rod is the bridge between a basic hone and a full stone-grind. By utilizing high-quality monocrystalline diamonds, this rod actually removes a microscopic amount of steel to recreate a sharp, biting edge on even the hardest alloys. The Engineering of a Perfect Edge At 600 grit, this rod is specifically engineered for 'medium' maintenance. It is aggressive enough to sharpen a dull blade that has lost its utility, yet fine enough to leave a smooth, refined finish that excels in professional environments. The 12-inch length provides the necessary travel for large 8-inch to 10-inch chef knives, ensuring a single, fluid stroke from heel to tip. Why the Oval Profile Matters Unlike traditional round rods that offer a narrow point of contact, the Oval shape of the Ultimate Edge rod provides a wider surface area. This increases the contact between the blade and the diamond abrasive, giving you more control, reducing the time spent sharpening, and ensuring a more consistent angle across the entire length of your knife. Convenience Meets Durability Designed for the fast-paced professional kitchen, this tool requires no messy oils or water. It is incredibly lightweight, reducing wrist fatigue during long prep sessions. Proudly Made in the USA, the M12W is built to withstand the rigors of commercial use while being simple enough for the home enthusiast to master in minutes. Learn More
