Shun Classic 8-inch Western Cook's Knife (DM0766)

The Shun Classic 8-inch Western Cook’s Knife is the Classic chef’s knife built for heavier work. Where the rest of the Shun Classic line uses a fine, acute edge, this knife is sharpened to a less acute angle that gives the edge additional strength for dense foods such as winter squash and large heads of cabbage. A taller blade with a pronounced curve suits cooks who rely on a rocking cut, and the knife keeps the thin blade and construction of the rest of the Shun Classic line. It handles a wide range of daily tasks, from slicing and dicing to mincing.

Features

  • Stronger edge geometry: The less acute edge resists damage when cutting through hard, dense produce.
  • Tall, curved Western profile: Generous blade height gives knuckle clearance, and the curved belly supports a smooth rocking motion.
  • VG-MAX cutting core: Shun’s proprietary steel is strong, fine-grained, and resistant to wear and corrosion, and it holds a long-lasting edge.
  • Stainless Damascus cladding: Layered stainless steel supports the core, adds stain resistance, and helps food release from the blade.
  • D-shaped ebony PakkaWood handle: The handle is comfortable in either hand, durable enough for daily use, and does not harbor bacteria.
  • Full composite tang: The composite construction keeps the knife light and balanced.
  • Handcrafted in Seki City, Japan: Each Shun Classic knife requires at least 100 individual steps to complete in Seki City, one of Japan’s most important blade-making centers since the 13th century.
  • Free lifetime sharpening: Shun offers free lifetime sharpening, so the knife can be professionally sharpened by the manufacturer whenever its edge needs restoring.

Tasks It Handles Well

  • Halving and cubing winter squash
  • Breaking down large heads of cabbage
  • Dicing onions and processing mirepoix with a rocking cut
  • Mincing herbs and garlic
  • Slicing boneless meats and cheeses

Choosing a Shun Chef’s Knife

For finer slicing and precise push cuts, the standard Shun Classic 8-inch Chef’s Knife has a more acute edge and a lighter, less curved blade. The Shun Classic 8-inch Hollow Ground Chef’s Knife adds indentations for cooks who struggle with food sticking to the blade.

When We Recommend the Shun Classic 8-inch Western Cook’s Knife

    Who it Fits Best

Cooks trained on German-style knives who prefer a tall blade and a rocking cut, and anyone who regularly cuts dense produce such as winter squash and large heads of cabbage.

    Where it Excels

Heavy vegetable prep with a constant rocking motion, such as mincing herbs, dicing onions, and processing mirepoix, and dense foods where the stronger 22° edge is less prone to damage.

    Professional Comparisons

Compared with the Shun Classic 8-inch Chef’s Knife, the Western Cook’s Knife has a taller blade (2.2 in. versus 1.9 in.), more weight (7.8 oz versus 6.7 oz), and a 22° edge in place of the 16° edge used across the rest of the Classic line.

    Chef Feedback

"Chefs love the extra knuckle clearance. If you have larger hands or find yourself hitting your knuckles on the cutting board with standard knives, the DM0766 is the solution."

    Trade-offs & Considerations

The greater curve leaves less flat edge for clean push cuts, and the less acute edge trades some keenness for strength. Cooks who prefer a finer edge for precise slicing should choose the standard DM0706.

    Care and Use

    • Hand wash with warm water and mild dish soap immediately after use, then dry completely with a towel. Do not place the knife in a dishwasher, soak it, or leave it to air-dry.
    • Rinse the blade promptly after cutting acidic foods such as citrus, tomatoes, and onions.
    • Cut on a wood surface, ideally hinoki, and avoid glass, marble, granite, and ceramic.
    • Do not cut bone or frozen food. Avoid twisting the blade, and move food across the board with the spine rather than the edge.
    • Hone regularly to keep the edge aligned between sharpenings, using a rod such as the Shun Classic 9-inch Combi Honing Rod.

    Warranty

Covered by Shun’s limited lifetime warranty.
