Shun Classic 3.5-inch Paring Knife (DM0700)

The Shun Classic 3.5-inch Paring Knife is the compact parer for cooks who do their detail work in hand. Its short blade keeps the tip and edge under direct control for peeling, pitting, coring, and trimming, and it handles small tasks on the board such as cutting garlic cloves and ginger. Next to the chef’s knife, Shun considers the paring knife the most essential blade in the kitchen, and this one shares the Damascus-clad blade and D-shaped handle of the entire Shun Classic line.

Features

  • VG-MAX cutting core: Shun’s proprietary steel is strong, fine-grained, and resistant to wear and corrosion. It takes a very keen edge and holds it through repetitive peeling and trimming.
  • Stainless Damascus cladding: Layered stainless steel supports the core, adds stain resistance, and helps food release from the blade.
  • Hand-sharpened double-bevel edge: The fine, symmetrical edge removes thin peels with little waste and serves left- and right-handed cooks equally well.
  • D-shaped ebony PakkaWood handle: The handle is comfortable in either hand, durable enough for daily use, and does not harbor bacteria.
  • Full composite tang: The composite construction keeps the knife light and balanced for precise control of the tip.
  • Handcrafted in Seki City, Japan: Each Shun Classic knife requires at least 100 individual steps to complete in Seki City, one of Japan’s most important blade-making centers since the 13th century.
  • Free lifetime sharpening: Shun offers free lifetime sharpening, so the knife can be professionally sharpened by the manufacturer whenever its edge needs restoring.

Tasks It Handles Well

  • Peeling apples, pears, and citrus in hand
  • Pitting stone fruit and removing seeds
  • Coring tomatoes and hulling strawberries
  • Trimming small vegetables and garnishes
  • Cutting garlic cloves and ginger on the board

Choosing a Shun Paring Knife

The Classic paring knife is available in two lengths. This 3.5-inch model is the more compact choice for close in-hand work, while the Shun Classic 4-inch Paring Knife adds edge length for larger produce such as extra-large potatoes and apples. The Shun Classic Blonde 3.5-inch Paring Knife offers the same construction with a light blonde PakkaWood handle. For tourné cuts and fluting mushroom caps, the curved blade of the Shun Classic 2.5-inch Bird’s Beak Paring Knife is the specialist tool.
