Care Instructions:
This knife is crafted from Aogami #2 carbon (not stainless) steel, prized for its extreme sharpness and edge retention. It requires proper care to prevent rust and maintain its performance.
Hand wash with mild soap and dry immediately and thoroughly after each use. Do not put in dishwasher. Apply a thin coat of food-grade mineral oil or camellia oil to the blade (especially the carbon steel cutting edge and cladding) regularly, particularly before storage. Sharpen on Japanese whetstones. Patina (a stable dark oxidation) will develop on the carbon steel portions with use, which is normal and helps protect against red rust.
