Mercer 7 7/8-inch Saucing Spoon

Mercer 7 7/8-inch Saucing Spoon

Shorter than the 9-inch model, the 7 7/8-inch saucing spoon gives finer control for small portions: a spoonful of beurre blanc, a line of reduction or a dot of purée beside a garnish. The bowl is deep, and its slightly tapered front directs the flow.

You can keep both lengths at the station, the long one for larger pours and this one for detail work. The handle’s micro-serrations keep it steady in the fingers.

Choosing a Plating Spoon

Compare the 9-inch saucing spoon, or choose this size in matte black or rose gold. Mercer also groups these tools into sets, listed in the Details.
