Mercer Silicone Plating Brush, 3mm Lancet Arch

The 3mm lancet arch brush draws a narrow stripe that tapers to a point, for a finer, more delicate swoosh than the round arch. It suits small plates, tasting menus and plated desserts where a heavy line would overwhelm the dish.

The silicone tip flexes to keep even contact with the plate.

    Tips for Best Results

    • Lay down a pool or dot of sauce first, then drag the brush through it in one confident stroke.
    • Use sauces with some body, such as purées, reductions and coulis; thin liquids will not hold a pattern.

    Care

    • Dishwasher safe.
    • Rinse sauces off before they dry so the silicone tip stays clean and supple.
