The pans are the same Italian-made 5-ply Stainless Clad cookware chefs know Made In for. The difference is the warm brass hardware, which suits a kitchen where cookware hangs on a rail or sits on open shelves. Six pans and four lids cover searing, simmering, sauces, and stock, so it can replace a mixed collection in one purchase.

What Each Piece Does

• 8-inch frying pan: Omelets for one, toasting spices and nuts, and small reductions.
• 10-inch frying pan: Searing steaks, chops, and chicken, and sautéing vegetables.
• 2-quart saucepan with lid: Rice and grains, and heating stock or milk.
• 3-quart saucier with lid: Its rounded base lets a whisk reach every corner, which makes it the pan for emulsified sauces, risotto, and custards.
• 4-quart saucepan with lid: Blanching vegetables, mashed potatoes, and larger batches of soup.
• 8-quart stock pot with lid: Stock, pasta, stews, and chili.
