Santoku Knives
Translated to mean “three virtues”, Santoku knives are effective all-purpose tools that vary in shape from the western chef knife but serve the same purpose in terms of their utilitarian functionality. The “three virtues” to which the word Santoku refers align with the three tasks of slicing, dicing, and mincing. Their shape is unique to other knives in that Santokus resemble truncated chef knives with altered tips and minimal camber. Unlike the blades of German knives that sweep upwards to meet the tip, the spines of Santokus are rounded downwards to meet the knife edge. Please note that the lack of camber interferes with a traditional rocking motion so Santokus are more often use in a chopping manner.

Zwilling Pro 5.5 in. Hollow Edge Rocking Santoku
The Agile Hybrid for Precision Work: The Zwilling Pro 5.5" HE Rocking Santoku This is the ultimate specialist for intricate prep work, blending Japanese design with German ergonomics in a nimble, compact form. The Zwilling Pro 5.5" Rocking Santoku is engineered for the cook who needs a versatile, non-stick tool for smaller tasks, from mincing garlic and shallots to creating paper-thin slices of vegetables. Its hybrid design offers two key advantages. First, the blade profile combines the wide body of a Santoku with the curved belly of a classic chef's knife, allowing for the comfortable, rhythmic rocking motion familiar to Western cooks. Second, the hollow edge (HE) features indentations along the blade that create small air pockets during slicing. This acts as a non-stick barrier, significantly reducing friction and preventing starchy foods like potatoes from clinging to the blade. This functionality is built upon the Pro series' foundation of excellence: a single piece of SIGMAFORGE steel, ice-hardened with the FRIODUR process for lasting sharpness, and guided by the tapered bolster for a supremely comfortable and controlled grip. Zwilling Pro 7 in. HE Rocking Santoku
The Best of Both Worlds, Perfected: The Zwilling Pro 7" HE Rocking Santoku Experience the ultimate fusion of Eastern design and Western ergonomics. The Zwilling Pro Rocking Santoku is a masterfully engineered hybrid, designed for the cook who loves the broad-bladed versatility of a Japanese Santoku but craves the familiar, rhythmic motion of a German chef's knife. This knife’s innovative design is complemented by its advanced features. The blade is distinguished by its hollow edge (HE)—a series of vertical indentations, also known as a Granton edge, that create small air pockets between the blade and the food. F. Dick Dark Nitro Santoku
The Santoku knife is the Asian classic and the most important knife in Asian cuisine. Santoku stands for “three virtues knife” – a term that is attributable to the versatility of the knife in cutting meat, fish and vegetables. The pointed end of the 7 inch long blade is used for decorating. With the DarkNitro series Friedr. Dick once again shows ultimate knife art. From the interaction of the unique blade optics with hammered finish and carbon look as well as the handle made of noble oak wood, unique knives are created. We use a special martensitic, stainless and nitrogen-alloyed steel in the DarkNitro series. This results in a unique combination of excellent cutting performance, exceptional hardness of 61 HRC and special corrosion resistance. For a perfect material structure, DarkNitro knives are forged in a special process and then ice-hardened at temperatures down to -100°. The very fine microstructure of the steel allows for simple sharpening, resulting in a very sharp cutting edge. The oak handle symbolises endurance, power and strength. The sharp and clear line of the handle reinforces the knife's aesthetics. We use the finest robust oak wood for the handle. Oak trees are known for their longevity; a tree can grow over 800 years old. The oak tree is shrouded in legend and steeped in history and is known for being one of the main deciduous trees in Europe. Ships were built with oak as long as 1,000 years ago and until today, oak barrels are used to store special whisky and wine. So it's no wonder that we chose an oak handle for our new unique series of knives. Learn More$260.00 -
