Santoku Knives

Translated to mean “three virtues”, Santoku knives are effective all-purpose tools that vary in shape from the western chef knife but serve the same purpose in terms of their utilitarian functionality. The “three virtues” to which the word Santoku refers align with the three tasks of slicing, dicing, and mincing. Their shape is unique to other knives in that Santokus resemble truncated chef knives with altered tips and minimal camber. Unlike the blades of German knives that sweep upwards to meet the tip, the spines of Santokus are rounded downwards to meet the knife edge. Please note that the lack of camber interferes with a traditional rocking motion so Santokus are more often use in a chopping manner.

  • Minonokuni Aogami Black 170mm Santoku

Authentic Japanese Kurouchi Blacksmithing Meets Hitachi Blue Steel Cutting Authority Master daily produce, meat, and fish preparation with an ultra-fine 50/50 double bevel forged for uncompromising edge retention. Crafted in the historic cutlery hub of Seki, Japan, the Minonokuni Aogami Black 170mm Santoku delivers relentless slicing capability built around genuine Hitachi Ao-Gami (Blue Paper Steel). Unlike softer, mass-produced stainless knives that crush delicate ingredients, this Santoku features a pure carbon core hardened to hold an acute, toothy edge through dense crates of root vegetables, firm proteins, and tender aromatics without wedging or tearing. The term santoku translates directly to 'three virtues,' signifying proficiency across slicing, dicing, and mincing. At 170mm (6.7 inches), this blade strikes the balance between agile board maneuvering in tight kitchen workspaces and sufficient flat cutting edge to power through prep lists. The traditional Kurouchi (black-forged) protective scale leaves an unpolished, rustic carbon finish along the upper blade flats, adding natural food release characteristics and partial protection against oxidation while highlighting authentic blacksmith heritage. Because this blade is non-stainless carbon steel, it develops a deep, stable blue-gray patina that reflects your cooking journey. Whether you are portioning boneless poultry, cross-cutting leeks, or brunoising shallots, the Minonokuni Aogami Santoku offers direct tactile feedback that allows you to cut faster with less hand fatigue. • Miyabi Black 7-inch Rocking Santoku

Santoku Height with a Rocking Curve The Miyabi Black 7-inch Rocking Santoku combines the tall, compact blade of a santoku with a curved edge that rolls from heel to tip. Cooks trained on Western chef’s knives can keep their rocking technique while gaining a shorter, more maneuverable blade. It suits home cooks and professionals who mince and dice in quantity but find an 8-inch blade more than they need.
Construction and Performance Ultra-hard core steel. A fine-grained powder steel holds a keen edge through the constant board contact of rock-chopping. Ice-hardened blade. Sub-zero hardening stabilizes the steel for added hardness and corrosion resistance. Flower Damascus cladding. Stainless layers protect the hard core and give each blade a distinctive pattern. Curved Honbazuke edge. The three-stage hand-honed edge follows the curve of the blade, keeping the cut even as the knife rocks through herbs and garlic. D-shaped handle. The traditional Japanese profile gives a secure grip through repetitive motion. Each handle’s grain and color are unique.
Best Uses Rock-mincing herbs, garlic and shallots Dicing onions and peppers Slicing vegetables for sautés and stir-fries Slicing boneless chicken and fish Chopping nuts and chocolate Cooks who prefer push-cutting should compare the flatter edge of the Miyabi Black 7-inch Santoku. For more length with the same rocking motion, see the Miyabi Black 8-inch Chef’s Knife. Learn More
  • Miyabi Black 7-inch Santoku

A Flat-Edged Alternative to the Chef’s Knife The Miyabi Black 7-inch Santoku is for cooks who cut with a downward chop or forward push rather than a rocking motion. Its flatter edge keeps more of the blade in contact with the board through each stroke, producing clean, complete cuts through stacked vegetables. The shorter length makes it quick and maneuverable on a crowded station or a small cutting board.
Construction and Performance Ultra-hard core steel. A fine-grained powder steel holds a keen edge through repeated board contact, the most demanding use a kitchen knife sees. Ice-hardened blade. Sub-zero hardening stabilizes the steel for added hardness and corrosion resistance. Flower Damascus cladding. Stainless layers protect the hard core and give each blade a distinctive pattern. Honbazuke edge. The three-stage hand-honed edge produces paper-thin slices of cucumber, radish and onion. D-shaped handle. The traditional Japanese profile gives a steady grip for repetitive chopping. Each handle’s grain and color are unique.
Best Uses Thin slicing of vegetables and fruit Dicing onions, peppers and potatoes Chopping and mincing herbs Slicing boneless fish and meat Cutting through stacked greens Cooks who prefer a rocking motion should consider the curved edge of the Miyabi Black 7-inch Rocking Santoku. For a longer blade with a pointed tip, see the Miyabi Black 8-inch Chef’s Knife. Learn More
  • Miyabi Artisan SG2 Rocking Santoku Knife, 7-Inch

The Intersection of Samurai Heritage and Modern Performance Effortless Rocking Motion Meets Scalpel-Like Precision In the world of high-performance Japanese cutlery, the Miyabi Artisan 7-inch Rocking Santoku stands as a masterclass in hybrid engineering. While a traditional Santoku is known for its vertical 'push-cut' motion, this 'Rocking' variant features a more pronounced belly curve. This allows you to transition seamlessly between the rhythmic rocking of a Western chef’s knife and the precise slicing of a Japanese blade. At its heart lies a core of SG2 (MC63) micro-carbide powder steel. This isn't your standard stainless; it is a high-carbon alloy with a 63 Rockwell Hardness, providing an edge that remains 'wicked sharp' long after other knives have dulled. The blade is ice-hardened using the CRYODUR process, a proprietary treatment that enhances durability and corrosion resistance without sacrificing the steel's legendary flexibility. Every inch of this blade tells a story of craftsmanship. The stunning Tsuchime finish (hand-hammered) creates small air pockets on the blade's surface, acting as a natural non-stick release for starchy potatoes or delicate cucumbers. The 'Bunka-style' clipped tip offers surgical accuracy for fine tasks like removing silver skin or mincing garlic. Completing the aesthetic and functional masterpiece is the D-shaped Cocobolo Rosewood Pakkawood handle, accented with brass and red spacers and a traditional mosaic pin. This handle is designed to nestle into the palm, reducing fatigue during long preparation sessions and providing a secure, comfortable choke grip for professional chefs and home enthusiasts alike. • Shun Kanso 7-inch Santoku Knife (SWT0718)

The Beauty of Essentialism: High-Performance Precision Without the Preciousness The Shun Kanso 7-inch Santoku is a direct answer to the chef who demands Japanese precision without the delicate maintenance of a mirrored blade. Inspired by the 'Kanso' principle of simplicity, this tool strips away ornamentation to focus entirely on the mechanics of the cut. Whether you are a high-volume line cook processing crates of mirepoix or a home enthusiast looking for a primary kitchen workhorse, the Kanso Santoku delivers a level of industrial-grade elegance that is rare in modern cutlery. Crafted from AUS10A high-carbon stainless steel, the blade is hardened to a 59/60 Rockwell rating. This provides the perfect 'sweet spot' for edge retention—it stays sharp through hours of prep but remains easy enough to hone back to a razor edge without specialized equipment. The signature 'Heritage' finish is not just aesthetic; it is a practical feature that hides the unavoidable scuffs and scratches of daily use, ensuring the knife looks better as it ages. The hollow-ground indentations are strategically placed to create air pockets, allowing starchy potatoes and dense proteins to slide off the blade effortlessly. This is a knife designed to keep your station moving at peak efficiency, regardless of the ingredients on your board. Learn More
